The newest recipe! Like Ambrosia Overnight Oatmeal, I was stunned by how much I enjoyed this cold oatmeal. If you’re not vegan, you can use any lemon curd. I used my Vegan Pseudo Lemon Curd.
I’ll admit that figs aren’t high on my list of favorite fruits, but if I were going to eat them, it would be in this recipe. Coconut and figs are best friends (I’m pretty sure).
One of my absolute favorites, this oatmeal is naturally sweetened and gets its lemon zap from lemon extract. Completely amazing.
