Raspberry Cheesecake Brownie Baked Oatmeal

I’ve been waiting months to make this. I would have done it sooner–I even bought the cream cheese!–but I was waiting for raspberries to be more affordable. Even at Trader Joe’s, they’ve been around $5, and I was not willing to fork over the money for that.

But we must really be in reach of summer because raspberries are finally under the $4 mark!

Have you ever had a brownie swirled with cream cheese and raspberries? I have. Have you ever had a vegan one? I have. Let’s be honest: there is something totally satisfying about a plain, simple brownie (especially if it’s dense and fudgy, and not cakey, but that’s a personal preference ). But Raspberry Cheesecake Brownies are one of the few that I find even more satisfying than an original.

Good news: this baked oatmeal perfectly captures that.

Chocolate-Covered Strawberry Oatmeal (with Chocolate PB2 Sauce)

I always liked the idea of an oatmeal dedicated to chocolate-covered strawberries, but I figured I basically already had one with my Chocolate Strawberry Oatmeal. However, I’ve recently been making a thin chocolate PB2 concoction and using it as a sauce over my banana soft serve, and that gave me inspiration for this recipe.

Dirt Pie Overnight Oatmeal

Happy Wednesday! The sun has finally come out again in New York City, and the forecast shows sun for the next week. ☀️ ☀️ ☀️ That means I’ll finally be able to get back to blogging.

You see, because I live in a Brooklyn apartment, it’s not feasible for me to take pictures outside (much to my displeasure). I have to take all my pictures right next to my bedroom window to get some natural light, and to get enough light, I need it to be MEGA sunny. Cloudy days work great for outside pictures, but not indoors. The past two weeks have been endlessly cloudy, resulting in me running out of recipes to post. My apologies.

Well, my least favorite holiday is coming up. I am the Scrooge of Valentine’s Day. I just don’t appreciate gift-giving holidays; there’s too much pressure. It’s the same reason I prefer Thanksgiving over Christmas–no gifts! 🙂

Blueberry Pineapple Overnight Oatmeal

Apparently it’s pineapple week on the blog. This occurred for no reason besides me realizing I had numerous bags of frozen fruit being ignored in my freezer. I guess that means you should expect lots of berries and pineapple in your future. ??

Sadly, I also realized that I’m not a huge fan of yogurt in my oats. Perhaps it’s because I prefer to eat my porridge warm. However, I also find the flavor of yogurt in oatmeal to be less cozy and earthy and wonderful. That being said, I know it’s popular, so I will do my best to provide recipes like this occasionally.

Cherry Cashew Oatmeal

This recipe came about from two different needs. 1) More “5 ingredients or less” recipes. 2) I booked a spontaneous flight to visit mon petit ami before my spring semester started, and I wanted to build up my recipe collection before leaving (hence all the guest posts recently).

Blood Orange and Raspberry Oatmeal

Every winter, I greatly anticipate the arrival of blood oranges. As soon as they pop up at the market, I buy several.

The problem is, I never know what to do with them. I like eating them plain, and I like putting them in salads, but I also want to use them in oatmeal. Citrus in oatmeal is a tricky task, as they tend to lose their bold, tangy flavor when combined with earthy oats. Plus, because blood oranges are such an underused fruit, I really never know what to combine them with.

So I used FoodGawker. I searched blood oranges to see what flavors other people were pairing them with. There were lots of salads, lots of curds, lots of homemade vinaigrettes. Lemon Berry Rosemary Oatmeal + Product Review: BetterOats

It has been a while since I put out a lemon recipe. Then I saw this recipe for Lemon Rosemary Shortbread cookies, and considering my recent love for rosemary, I knew this needed to happen.

Lemon pairs well with almost any herb. I’ve already paired it with thyme, but rosemary is my jam right now. This recipe uses the hidden banana trick, and it was adapted closely from my Lemon Blueberry Oatmeal, so if you’re (inexplicably) not into rosemary, you can always just make it sans herb. Cheesecake Baked Oatmeal

I gave up on this recipe ages ago. As I mentioned in my Berry Cream Cheese Baked Oatmeal, I have been trying to master a cheesecake oatmeal since 2013! Now that I like the taste of Tofutti, and I’ve discovered the trick of adding zucchini, I figured it was time to try it again.

Cherry-Berry Oatmeal with Chocolate PB2 and Toasted Coconut

I used to have a strong aversion to cooking my fruits in my oatmeal. What was the point of having fresh fruit if I were just going to boil it to oblivion in my oatmeal? However, I’ve recently come around.

First of all, the flavor is astounding. Second of all, it’s a perfect solution if you’re working with frozen fruits (as I often am when it comes to cherries). And third of all, you can still include fresh chopped berries that you add in later, so it’s the best of both worlds.

This recipe reminds me of my Black Forest Oatmeal, and I almost called it Black Forest Oatmeal 3.0 (since I’ve made so many versions of this particular flavor). However, I decided against it.

I used chocolate PB2 (obviously), but you can sub in any chocolate nut butter (yes, including Nutella), or you can take regular peanut butter and mix in cocoa powder–and maybe some sweetener if you think it’s necessary.

Random Recommendations:

Cherry-Berry Oatmeal with Chocolate PB2 and Toasted Coconut

Prep Time: 5 minutes

Cook Time: 5 minutes

Yield: serves 1

What you'll need:

  • 3/4 cup milk of choice
  • 1/4 cup quick cook steel cut oats
  • 5 frozen or fresh cherries, pitted and halved
  • 5-10 fresh strawberries (frozen not recommended)
  • 1/4 tsp vanilla extract
  • pinch of salt
  • For topping
  • serving of chocolate PB2 or nut butter* (OR Faux-reo Cookie PB2)
  • unsweetened coconut flakes or chips
  • optional: chocolate chips, chunks, or chopped dark chocolate; almonds; strawberries for garnish

How to make it:

  1. Add liquid to a saucepan over medium heat. Bring it to a low boil and add oats. Reduce heat to medium low (it should be at a simmer).
  2. Add halved frozen cherries.
  3. Dice strawberries (the smaller, the better, in my opinion) and add HALF of them to the oatmeal along with the vanilla extract and salt.
  4. While you wait, toast your coconut. In a small skillet over medium low heat, add a handful of coconut. Shake the skillet occasionally so the coconut toasts evenly. When coconut starts to show tooasty golden goodness, remove from heat and set aside.
  5. When you're pleased with the consistency of the oatmeal, stir in the remaining strawberries, and then transfer to a bowl. Add a splash of milk, chocolate PB2, and toasted coconut, and any other optional toppings.

Just an FYI:

* You can make your own chocolate nut butter or PB2 by mixing in a teaspoon of cocoa powder. If desired, you could also add sweetener.
