Blueberry Apple Oatmeal

I’ve done so many oatmeal recipes with apples, but I’m just now exploring the concept of using apples as a base like I do with banana. This is thanks to grating. With a grated apple, you get the taste and volume of apple without the chunks. When you dice an apple, those chunks steal the focus of the oatmeal. When you’re making Apple Pie Oatmeal or Apple Cinnamon Oatmeal, that’s a good thing. But sometimes, you want apple in the background. Voila, grating.*

*Or use applesauce, if you insist.

In addition to the grated apple, I spiced the base with my usual cinnamon + vanilla combo. Why? Because it’s classic. It works in the majority of my oatmeal recipes. It’s not me being lazy. It’s me acknowledging what works. And this works. Every time. (more…)

Mojito Overnight Oatmeal

Once upon a time, in my blog’s infancy, I made Strawberry Mojito Oatmeal. Not many are brave enough to try it. After all, it includes a little banana, yet I try to convince you it’s undetectable beneath the lime and mint flavor. I stand by that claim, but this time I took a different approach.

Mojito Overnight Oatmeal #oatmealartist

First of all, this is an overnight recipe, so you enjoy it cold, like you would an actual mojito. Second of all, I went with grated zucchini instead of banana . . . because you guys LOVE zucchini in your oatmeal. Yes, I hear you. You love your #zoats.

Papaya Blueberry Oatmeal

After successfully creating my Papaya, Lime, & Coconut Overnight Oatmeal, I reveled in my accomplishments for a few days. But then, suddenly, I realized I had to do something with the rest of that papaya. Some of it went into the freezer to make sorbet (which was delicious), but the rest waited for me in a Tupperware container. I was desperate to use it up, mostly because it was hogging an annoying amount of space in my New York City-sized refrigerator.

Papaya Blueberry Oatmeal by The Oatmeal Artist #vegan I also happened to have a large pint of blueberries on hand. I don’t trust berries, so whenever I have them, I try to use them as fast as possible. Thus, this combo was born. It’s not the most inspiring tale, but it’s the final result that matters. (more…)

Raspberry Oatmeal with Tahini & Dark Chocolate Chunks

My first tahini experience! Ta-da!

Raspberry Oatmeal with Tahini and Dark Chocolate Chunks by The Oatmeal Artist

For years, I’ve been buying the “tahini sauce” from Trader Joe’s and using it for salad dressing. It is not the same as plain ol’ tahini. Tahini sauce contains add-ins like lemon juice and garlic. In fact, it kind of tastes like hummus, without the chickpeas! Thus, when I observed multiple #oatmealartist posts on Instagram include tahini, I was appalled. “YOU ARE TOPPING YOUR FRUITY OATMEAL WITH GARLICKY TAHINI?! (more…)

Blueberry and Basil Steel-Cut Oatmeal with Roasted Pecans [Guest Post]

Hello, TheOatmealArtist readers! It’s Monica from My Pink Recipe Book again, back to share another oatmeal recipe, this time for a Blueberry and Basil Steel Cut Oatmeal with Roasted Pecans. Being a full-time med student, my food-focus is typically quick and easy, while always being healthy and full of nutrient-dense ingredients. Thus, oats are a very common staple in my diet.

Blueberry-Basil-Pecan-Oatmeal

My love for combining fruits and herbs all started with a Strawberry and Basil smoothie I made at the beginning of this summer. Realizing what a fantastic pairing they were, I vowed to create more recipes pairing fruits and herbs. One evening, as I was pondering what to have for my breakfast the next morning, I glanced over, and similarly to Lauren, spotted my basil plant by my window. (aside: my too has since withered away) Immediately, I knew I wanted to make a steel cut oatmeal in the morning that would pair well with this delicious, slightly sweet and licorice-tasting herb.

Since I had tried strawberries already and knew they were a winner, I thought to venture out to more berries and include blueberries instead. Since I like to keep my breakfasts high in protein, I tossed in a generous amount of chopped pecans. Topping this oatmeal dish off with a drizzle of honey made it feel almost like a dessert, but knowing how healthy it really was made it that much more enjoyable to eat.

To get the recipe, head on over to my blog and read more about the Blueberry and Basil Steel Cut Oatmeal with Roasted Pecans.

Lemon Baked Oatmeal with Raspberry Filling

As I announced on Wednesday’s guest post, Monica from MyPinkRecipeBook.com and I are currently engaging in a recipe swap as we embark on our individual summer traveling. Make sure you check out those Four-Ingredient Fudgy Oat Bars! They’re no-bake!

Lemon Baked Oatmeal with Raspberry Filling #oatmealartist

For my contribution to our recipe swap, I made this baked oatmeal inspired by layer cakes. The baked oatmeal is lemon-flavored, and it’s brought together in the center by sweet and simple raspberry jam. As always, this recipe is vegan, sweetened by fruit (except for the jam), and uses simple pantry ingredients. (more…)

Strawberry and Chamomile Steel-Cut Oatmeal [Guest Post]

Happy Friday, and happy early July 4th to my American readers. I’m busy unpacking from my move to a new apartment this week, and to keep the blog from being silent this week, I recruited some fantastic blog readers to share their own recipes with you. THANK YOU to everyone who volunteered to help out, and thank you to Monica for submitting this gorgeous recipe for me to post today.

Strawberry and Chamomile Steel-Cut Oatmeal

Hello all, my name is Monica and I am from the new food blog, My Pink Recipe Book. I am very honoured to be writing as a guest blog here on the Oatmeal Artist, a blog that I have turned to quite a few times for tasty breakfast inspirations. Today I am sharing with you a very seasonal steel cut oatmeal recipe, featuring loads of strawberries and fresh chamomile (with the option of dried chamomile as well).

Strawberry and Chamomile Steel-Cut Oatmeal #oatmealartist

Over the past year, one of my favourite weekend activities has become visiting my local Farmer’s Markets in Toronto. With all the gorgeous seasonal produce, I find myself creating recipes on my way home, practically jogging to get into the kitchen and start testing them out. This oatmeal was one of those recipes, inspired by the gorgeous chamomile flowers and luscious strawberries I picked up last Saturday. It is a little unique because instead of adding chopped strawberries at the end, you actually add them right at the beginning so that your oats cook in the strawberry juices instead of only water. The result makes me feel like I’m eating a strawberry pie for breakfast.

The chamomile is very delicate, and the crunchy pistachios match perfectly with the existing flavours. Topping it off with some honey tames the slight tartness the strawberries provide, leaving you with a real treat for your breakfast. I hope you all enjoy this oatmeal as much as I do.

Strawberry and Chamomile Steel-Cut Oatmeal with Roasted Pistachios

Prep Time: 5 minutes

Cook Time: 30 minutes

Yield: serves 2

What you'll need:

  • 1 cup steel cut oats
  • 2 cups water
  • 1 pint strawberries, chopped
  • 2/3 cups pistachios
  • 1 bunch fresh chamomile flowers (about 20 flowers), or 1/2 tbsp dried chamomile
  • 2 tbsp honey
  • optional: 1 tbsp bee pollen

How to make it:

  1. Preheat the oven to 300 F (for the pistachios).
  2. Add oats, water, and sliced strawberries to a pot to bring to a boil.
  3. While the mixture is heating, mash the strawberries in the pot to help release their juices.
  4. Add the chamomile petals and yellow centre (avoid the green stem), or the dried chamomile, to the pot.
  5. Cook oats as normal at this point, until achieving your desired steel cut oats consistency
  6. While the oats are cooking, bake the pistachios for 20 minutes.
  7. Portion the oatmeal into two bowls, topping each with 1/3 cup of pistachios, a generous drizzle of honey, and optional sprinkling of bee pollen.

Lemon Blueberry Oatcakes

First, thanks to everyone for your outpouring of support on Monday’s post. I decided back in November (three months into the school year) that it would be my last year teaching, and let me tell you, those next seven months were the longest of my life. That last day of school made me cry the happiest of tears.

So…pancakes, anyone?

Lemon Blueberry Oatcakes

These were super….but I’ve decided that I simply don’t like pancakes that much. 😛 Even the healthier oatmeal version gives me a bit of a stomach ache and just doesn’t soothe my soul the way a bowl of stovetop oats do. I may still post an oatcake recipe every now and then, but probably like once a year. haha.

Chocolate Chili Cherry Oatmeal

As a herbivore, I have to be selective about my chocolate obsession. Luckily, I have a strong preference for dark chocolate (my motto is “higher than 70% or GTFO”), and many brands of dark chocolate are accidentally vegan. For example, Lindt’s dark chocolate (75% and higher) are all dairy-free.

Chocolate Chili Cherry Oatmeal

However, if you want a different variety, such as one with almonds or espresso beans, you’re often out of luck. That’s why I love the Chocolove brand. In addition to their sustainability and social responsibility efforts, they offer several unique dark chocolate varieties that are completely dairy-free!

My favorite of these is–you guessed it–Chilies & Cherries & Dark Chocolate bar. Obviously this bar uses dried cherries, but since it’s prime cherry season, I used the real deal for this oatmeal. (more…)

Strawberry Apricot Mint Breakfast Cobbler

Check out this newest addition to my breakfast cobbler family:

Strawberry Apricot Mint Breakfast Cobbler

Before I give you the recipe, let me indulge in some personal reflection.

I’ve had some more time here and there lately. My grad school courses finished for the semester, and I instantly felt a weight lifted. Suddenly, a had a wealth of hours that could be dedicated to whatever I wanted. At first, they were spent lying in bed watching stand-up comedy. I needed to recuperate. Badly. (more…)
