Lemon White Chocolate Oatmeal

Is it spring? I thought it was, but then I went to Philadelphia with my spring coat and basically froze to death. As soon as I returned to my apartment in New York, I switched back to my heavy winter coat. Ugh!

To fool myself into thinking it is, in fact, spring, I returned to my beloved lemon-flavored oats. Every spring, I just can’t get enough lemon in my oatmeal!  This time, I combined it with white chocolate chips. The tang of the lemon and the sweet white chocolate are definitely a winning combination!

Another fun way to make this oatmeal would be with a blob of Peanut Butter & Co.’s White Chocolate Wonderful. It’s definitely not my favorite (tastes like Butterfingers or something), but I know a lot of people who love it, so…

Lemon White Chocolate Oatmeal

Ingredients (serves 1)
  • 3/4 cup milk of choice, or water
  • 1/4 cup quick cook steel-cut oats (I use Country Choice Organic)
  • 1 ripe banana
  • 2 tbsp lemon juice (the juice of one lemon) or 1 tsp lemon extract
  • pinch of salt
  • handful of white chocolate chips (I use the King David brand)
Instructions
  1. Bring milk (I use 1/2 c almond milk and 1/4 c water) to a boil, add oats, and reduce heat to medium. (If you’d like to add a teaspoon of flax or chia seeds, do so now.)
  2. Mash banana thoroughly and stir into oatmeal.
  3. Once more of the liquid has absorbed, add lemon juice, lemon extract, and salt. Stir.
  4. When you’re pleased with the consistency of the oatmeal, transfer to a bowl. Add a splash of your milk of choice, white chocolate chips, and any other additional toppings (pomegranate seeds, shredded coconut, nuts, etc.).

Shamrock Oatmeal

St. Patrick’s Day is coming up! I have mixed feelings for St. Patrick’s Day. In a way, I adore it. It reminds me of my beloved Ireland, where I studied abroad during college. On the other hand, the way Americans celebrate it is almost offensive to me. Yes, even in Ireland, binge-eating and drinking is the tradition, but in America, all of it is surrounded by an absurd mockery of the culture. TV and radio ads are taken over by obnoxious fake Irish accents, ridiculous looking leprechauns are plastered everywhere, and everything is dyed fluorescent green. Nooooo. . .

Last year, I rejected that by making Irish Soda Bread Baked Oatmeal, which turned out surprisingly well (to this day I’m shocked it actually turned out). This year, I decided to embrace the American absurdity and make a Shamrock Oatmeal. Why not, right? Unlike McDonald’s, my porridge contains no dairy and no food coloring. Instead, it’s extraordinarily rich in nutrients (but still packed with flavor).

What’s the secret? Spinach.

Strawberry Almond Oatmeal

Inspired by my recent Berry, Almond, & Coconut Oatmeal, I realized I haven’t done enough with almond extract. So many possibilities!

My favorite aspect of almond extract (besides its taste) is the intensity of its flavor. This allows me to (drum roll please) . . .use the hidden banana trick! Oatmeal without banana is like a cookie without chocolate chips (a poor analogy, considering my favorite cookie is a snickerdoodle).

Anyway, strawberries have been–inexplicably–on sale and in great quality at my local produce market, so I’ve been enjoying them in my oatmeal and salads. Combined with the nutty almond extract, this oatmeal is a fresh and fruity delight.

Gingerbread White Chocolate Chip Oatmeal

My sister and her husband hooked me up for Christmas. In addition to the fantastic vanilla bean paste they gave me, I also received four bags of nondairy white chocolate chips. Hooray! Time to make those white chocolate recipes I’ve been dreaming up.

The white chocolate chips add an unexpected sweetness that mellows out the intense gingerbread spices. To keep this porridge healthy, go easy on the chocolate chips. The banana makes the oatmeal sweet and healthy, and a small handful of white chocolate chips will just add a hint of pizzazz.

Berry, Almond, and Coconut Oatmeal

Whenever I make a recipe with coconut, I become angry with myself for not doing so more often. Coconut is so…perfect in every way. Buttery, rich, flavorful. So great.

This oatmeal combines the lovely combination of almonds and coconut, like my Almond Joy Oatmeal. It also contains a hidden banana, so I guess you could say they’re close cousins. The difference is this one tastes a little healthier (without the chocolate, and the addition of fresh berries)! However, these cousins are equally tasty. 🙂

Lemon, Thyme, and Honey Oatmeal

The more I experiment with savory oatmeal, the more I accept that I prefer recipes that are “half savory.” The Greek Oatmeal and Pizza Porridge recipes are both great…but I’d much rather have the sweet, velvety texture of Butternut Squash Oatmeal or the perfect flavor pairing of Sweet Potato and Soyrizo Oatmeal.

I suppose that’s why I’ve somewhat recently been inspired by dessert recipes that feature herbs, like this sorbet recipe. It allows me to combine my love of fruity oatmeal with flavors that are associated with more savory dishes.

Lemon Steel-Cut Oatmeal

Every time I think all my lemon ideas have dried up, another springs to my mind. As of this moment, I can’t say I have any more lemon recipes to give you. However, I’m sure within a couple of months, I’ll miraculously think of another. It’s simply inevitable.

Lemon Lover’s Baked Oatmeal

As I type this, my eyelids are drooping. I don’t often talk about my work life on here, but times like this make it difficult to contemplate anything else. I spent the weekend redecorating my classroom, and on Saturday I was at school from 10 AM to 10 PM. ON THE WEEKEND, you guys! Today, I worked a similar length, but at least I was able to spend a portion of those hours working in my favorite coffee shop.

When I made this oatmeal on Sunday morning, I struggled to stay motivated. After working 12 hours a day, 8 days in a row, baking an oatmeal seems incredibly undesirable. However, this is what I scheduled to prepare over the weekend, and I had all the ingredients to do so. I knew the results would be worth it.

Choco-Cherry Cashew Oatmeal

KIND bars cost too much. Let’s all agree on that. Certainly, they are a high-quality product and deserve to cost as much as they do. However, this girl will not be buying them on the regular. This girl receives a living stipend (not an actual salary) and spends too much money at Banana Republic.

However, I splurge on one or two bars from time to time. In August, when I was technically homeless for a week, was massively in debt, and had no functioning kitchen to cook in, I survived on bananas, hummus, and whole wheat naan. To make my life seem less pathetic, I also treated myself to one single KIND bar.

I remember unwrapping it for a mid-morning snack during my staff training session. For a moment, my boss’s voice faded off as my attention focused on the brilliance happening in my mouth. Dark chocolate, sweet cherries, and salty cashews worked harmoniously and created a chewy, crunchy, decadent snack bar.

Gingerbread Steel-Cut Oatmeal

I’ve made Gingerbread Oatmeal before. You might remember it. It was one of my trials. One of my struggles. One of my white flags.I gave up and just borrowed a recipe from Vegan Yack .

This recipe is mine. Well, I can’t take all the credit, of course. VYA’s recipe did influence me a lot. However, I made sure to include some bananas in my version because I’m stubborn like that. I’m grateful I did because this was one spicy [insert colorful language here]. The banana helped mellow out all those cloves.
