Gingerbread Persimmon Oatmeal + Product Review: BetterOats

Lately, I have been on the constant prowl for recipes that would work well with persimmon. My philosophy is this: persimmon has a muted but pleasant flavor, and pairs best with bold flavors. That is why I used this delightful fruit atop my Chai-Spiced Pumpkin Oatmeal; it contributed a calm sweetness to an otherwise “loud” oatmeal base.

Next up? Gingerbread.

I have made gingerbread oatmeal a variety of ways: with banana, with sweet potato, and with pumpkin. Truthfully, they all work beautifully, and it all depends on what “background flavor” you want in your life (i.e. just pick your favorite). Alternatively, you could use grated zucchini or yellow squash for a nutritional filler that adds no flavor. (more…)


Chestnut Maple Latte Oatmeal

Like my Chestnut Maple Oatmeal, this originally took inspiration from chestnut praline. In fact, I had heard of Chestnut Praline Lattes from Starbucks, and, despite the fact that I have no idea what that is or what it tastes like, I thought I should replicate it. I have been known to do that. ?

But then I saw it’s already been done, and I decided not to go through the trouble. What is praline, anyway? I don’t have time for that nonsense. We all know maple syrup is tastier anyway.

Carrot Cake Baked Oatmeal with Cream Cheese

I’m not going to sugar-coat this: I hate these pictures. ? I planned to post this recipe ages ago, but I hated the pictures too much. However, I’m also too lazy to retake them.

I’m not sure why I decided to start with the fanciest, but I have to start somewhere, n’est-ce pas? I would argue, however, that turtle cheesecake is one of the more popular variations on the popular dessert.

Gingerbread Cream Cheese Baked Oatmeal

It’s December! That means it’s time to start rolling out the Christmas-inspired recipes. Yippee!

Gingerbread cookies are interesting. What really is the difference between gingerbread cookies and ginger molasses cookies? Can anyone answer this for me? They taste the same to me. Is it just the fact that gingerbread cookies are flat and snappy, while ginger molasses cookies tend to be puffier and softer? Yes? No? Maybe? And where do gingersnaps fit in this category? They all taste the same, am I right?!

Anyway, I feel like “gingersnaps” and “ginger molasses” cookies are enjoyed year round, but gingerbread cookies (particularly gingerbread man cookies) are specifically associated with the holiday season. I think it has to do with the hearty earthiness of the gingerbread flavor. We seem to like those flavors more during the winter months than the summer months.

Am I crazy? Does all of this sound made up? I just don’t know.

Banana Spice Cake Baked Oatmeal with Cream Cheese

You know what’s delicious? Banana spice cake with cream cheese frosting.

I fell in love with that cake during my sophomore year of college. The dining hall would serve a variety of desserts every evening, and I loved when they offered this cake. My roommate/cousin (hi, Candice!) would always grab a slice when this was available.

Now that I like vegan cream cheese, I was so excited to finally make this oatmeal. I have to say, out of all my cream cheese oatmeals (I have many more, and they will be posted in the upcoming weeks!), this one is my favorite.

Cheesecake Baked Oatmeal

I gave up on this recipe ages ago. As I mentioned in my Berry Cream Cheese Baked Oatmeal, I have been trying to master a cheesecake oatmeal since 2013! Now that I like the taste of Tofutti, and I’ve discovered the trick of adding zucchini, I figured it was time to try it again.

Half a year ago, I finally bought some matcha powder online. Truthfully, I’m not the world’s biggest fan of matcha. I think it needs a lot of sweetener to taste good, and as you know, my digestive system can’t handle sweets. However, after spending all that money on it, and then seeing it camp out in the back of my cupboard for months, I felt guilty. I needed to make another recipe with it, or it was going to keep haunting me.

Tres Leches Baked Oatmeal Parfait (with Cashew-Yogurt Cream)

Consider this more an homage to the real deal. Actual tres leches cake involves a ton of dairy ingredients that is elusive to us humble vegans. I know there are recipes for vegan sweetened condensed milk out there, but my motto is always simplicity. Considering I already had to soak cashews for this recipe, I’m not about to make a sweetened condensed plant-based milk as well. I HAVE MY LIMITS. 🙂
