Fudgy Banana Steel-Cut Oatmeal with Peanut Butter

So you love my Fudgy Banana & Peanut Butter Oatmeal, eh?

Well, what if you want to make a steel-cut version?

…Or what if you want to feed a friend (or a “friend” 😉 ). Or maybe a whole crowd. Or yourself…for a week!

Here you go. The ingredients are shown for two servings, but it will work perfectly to double everything for four servings. Yay!

Hummingbird Cake Batter Oatmeal

I knew I would love this recipe. Bananas + pineapple + cinnamon + pecans. I love all of those ingredients, and I keep them on hand consistently. So why didn’t I make it earlier?

Hummingbird Cake Batter Oatmeal by The Oatmeal Artist #vegan

I always envisioned it as a baked oatmeal recipe. As my regular readers already know, I much prefer stovetop oatmeal. That kept me from making this sooner. Finally, last weekend I decided to do things my way and enjoy this recipe in the form I would prefer. Therefore, I give you cake batter. Cake batter is trendy now anyway, isn’t it? 😉

Almond Joy Oatmeal #2

Yep, I already have an Almond Joy Oatmeal. I KNOW. This isn’t an “improved” recipe, either. The other one was already perfect. I just came up with a different way to make it.

(To be honest, I just wanted to eat more chocolate PB2.)

Banana PB and J Oatcakes

File this one under “things I should have made two years ago.”

Banana PB &J Oatcakes by The Oatmeal Artist

I knew I wanted to make oatcakes for my last recipe of 2014, but I wasn’t sure which one. I have plenty of ideas for oatcake recipes, but none of them could be made at my parents’ house (missing some ingredients). Plus, I wanted banana. And peanut butter.

I actually had to go back and check my recipe list to make sure that I had never made this before. Seriously, how did I not make this earlier?

Banana PB&J Oatmeal

Well, this is awkward. Did you know this is the recipe I make more than any others? The other day, I was gearing up to make it (like always), and then I remembered that I didn’t have any attractive pictures of it. I decided that I would change that. I snapped the pictures, edited them, and searched for the blog post to change them.

Banana PB&J Oatmeal - The Oatmeal Artist

The thing is, that post didn’t really exist. For its entire life, Banana PB&J Oatmeal has lived simply on a list of variations of Peanut Butter Oatmeal. How could I have subjected it to such a life?!

Instead of adding the pictures to that post, I decided to call it up on stage and give it the spotlight it deserves. This way, I will be able to link to the recipe every time I talk about it. Yippee!

Banana PB&J Oatmeal

Prep Time: 2 minutes

Cook Time: 5 minutes

Yield: serves 1

What you'll need:

  • 1 cup milk of choice, or water
  • 1/2 cup rolled oats (I use Country Choice Organic)
  • 1 ripe or overripe banana
  • 1/2 tsp vanilla extract
  • 1/4 tsp cinnamon
  • pinch of salt
  • 1-2 tbsp of peanut butter*
  • 1 tbsp jam*

How to make it:

  1. Bring milk (I use an equal mixture of almond milk and water) to a boil, add oats, and reduce heat to medium. (If you’d like to add flax or chia seeds, do so now. I recommend flax.)
  2. Mash up banana and add to the oatmeal. Stir.
  3. Once more of the liquid has dissolved, add vanilla extract, a tiny pinch of salt, and cinnamon. Stir.
  4. When you’re pleased with the consistency of the oatmeal, transfer to a bowl. Swirl or stir in jam (I like to leave in globs or strips of jam instead of stirring it in completely). Top with peanut butter.
  5. Add another splash of your milk of choice and any other additional toppings (shredded coconut, nuts, etc.).

Just an FYI:

*I often use PB2. *I prefer grape, but any flavor will work.

Banana Cream Pie Overnight Oatmeal Parfait

I know what you’re thinking: “Lauren, this recipe is a repeat. You’ve done this before.”

Nah, that was just regular overnight oatmeal, mixed together in one jar. This recipe is a parfait. This one is special. This one contains whipped cream.

Wait, vegans! Don’t go! It contains whipped coconut cream. You know how I do.

I’ve always wanted to make whipped coconut cream. Can you believe it’s taken me this long to try it? It’s actually shameful. I kept thinking it was too much work, but it was one of the easiest things I’ve ever done. It took me approximately 45 seconds from start to finish (and most of that time was opening the can). Chocolate Chai Oatmeal

This oatmeal is loaded with spicy flavor! All those masala chai spices mixed with cocoa creates such a unique, flavorful porridge.

Because the cocoa and chai spices are so intense, you can use banana without tasting it. For those of you who are allergic to bananas (or are just stubborn), you could also use pumpkin puree with some sweetener instead. (more…)

Carrot Cake (and Carrot Banana) Steel-Cut Oatmeal

TWO recipes today! You’re welcome.Carrot Cake Steel-Cut Oatmeal isn’t that exciting; it’s basically an adaptation of my regular Carrot Cake Oatmeal. The only difference is it takes longer to cook (and it serves four instead of one, but that’s just an issue of multiplication and division).

Thus, I’m including a variation. A banana variation, because potassium. (Everything about that last sentence is making the grammarian in me cringe, but whatever.)

I can’t say much about the Carrot Cake version–it’s exactly what you would expect. Instead, let me tell you about the banana version.

Peach Banana Muesli

Week 6 of not having a stove. ?

peach-2Bbanana-2Bmuesli-2B-4-

It’s becoming painful, yo. When so much of your happiness relies on your ability to cook and prepare food, not having a functioning stove is a terrible blow. We’ve been dealing with our electronic company for weeks trying to convince them to turn on our gas. Every time, it’s “You need to do X.” So then we do X. We wait. We call back. They say, “You did X, but you still need to do Y.” We say, “You never told us that, but okay.” We do Y. We wait. We call back. Etc.

FOR SIX WEEKS. ??

Getting Fit #9

This is the ninth segment of my Getting Fit series. This series features my friend Crystal, a rockstar figure skater and fellow oatmeal lover. You can her blog, Confessions of Crystal, and check out her Instagram,@crystalchilcott.

TOA: Hello, Crystal! I have been watching all of your travels throughout Colorado on Instagram, and it looks like you’re having such a blast these days. You also share pictures of your “grocery finds” and meals from special restaurants.

I’m completing a 5k this fall. I know you have Collegiate Nationals next week (good luck!!), so I was wondering how you fuel yourself in the days leading up to your big competition.

Crystal: Hi Lauren! I’ve really enjoyed exploring more of Colorado before my year abroad!

Congratulations on your decision to complete a 5k! In the days leading up to an event, I usually stick to my usual diet. The changes usually happen on the day I travel to the competition and actually compete. Staying in a hotel room without a kitchen makes it hard to follow my usual diet so I have to adapt.

TOA: How do you do that? Do you bring your own food, or do you have to eat out?

Crystal: It’s usually a mix of both. I always ask for a fridge in my hotel room and stock up on staples like fruit, carrots, and Greek yogurt. I do usually have to eat out for at least one meal though.

TOA: What do you typically eat for breakfast and/or lunch on the day of a competition?

Crystal: My stomach is always upset on days I compete so I try to stick to oatmeal and whole grain bread with nut butter and fruit. I also make sure to have some green tea.

TOA: I have a similar problem! Back in high school when I had vocal contest, I wouldn’t be able to eat a thing all day until after my solo (at which point I went straight to the cafeteria and ordered one of everything, haha).

Do you practice the day before your competition, or rest?

Crystal: I have to force myself to eat something or else I won’t have energy! I have a 20 minute warm up where I just go through everything a few times. It depends on what time I compete what I do the rest of the day.

TOA: If you could pick any oatmeal recipe to eat on the day of your competition, what would it be?

Crystal: I would have berry banana baked oatmeal topped with peanut butter!

TOA: Of course you would! Well, best of luck to you with your competition next week!!

Crystal: Thank you!

——-
In honor of Crystal’s favorite recipe (and her upcoming big competition), I’ve decided to round up some recipes. However, I’m going to do something a little different. Instead of sharing my own recipes with you, here are five recipes similar to my Berry Banana Baked Oatmeal (with peanut butter) from around the web! (Note that not all recipes are vegan.)
**You can also find hundreds of other oatmeal recipes (as well as tons of other meatless recipes) on my Pinterest account!  You can also like The Oatmeal Artist on Facebook. Thanks!
