Banana Cream Pie Overnight Oatmeal

Banana Cream Pie is one of my favorite desserts…but only when it’s made correctly (aka homemade). I hate when people just whip up Jell-O banana pudding and stick it on top of a store-bought crust, and then squirt some canned whipped cream on top. It’s absolutely insulting!


I’ve wanted to create a banana cream pie oatmeal for a while now, but I wasn’t quite sure how to go about it. Would it just be a regular banana oatmeal with extra vanilla extract? Would I top it with something (banana soft serve? coconut whipped cream? soy yogurt?) to resemble the “cream?”

But then I got THIS idea. And it’s PERFECT. Banana Cream Pie should be cold, anyway, NOT hot! Plus, I like to think of overnight refrigerator oatmeal more like “oatmeal pudding,” and pudding is exactly what I wanted this oatmeal to resemble!



Banana Cream Pie Overnight Oatmeal

Prep Time: 5 minutes

Yield: serves 1

What you'll need:

  • 1/2 cup regular rolled oats
  • 1/2 cup milk of choice
  • 1 tsp chia seeds
  • 1 overripe banana
  • 1/2 tsp vanilla extract
  • 1/4 cup plain or vanilla yogurt, such as SoDelicious (optional)
  • pinch of salt

How to make it:

  1. Add the first three ingredients to a mason jar.
  2. Mash up 2/3 of your banana and add to the jar. Slice the remaining 1/3 into the jar.
  3. Add vanilla extract, optional yogurt, and salt. Put the cover tightly on the jar and shake, shake, shake.
  4. Place in the fridge overnight. In the morning, you will have a delicious, dessert-like oatmeal ready and waiting for you!

    So delicious! I had an extremely overripe banana in my fridge that needed to be used. I used 1 cup unsweetened vanilla almond milk and added a dash of cinnamon as well. In the morning I added 1 tsp of Chia seeds, a dash of salt, and heated it up in the microwave.

    Oh my dear, I just randomly found your blog through Pinterest. I love oatmeal, I could eat it every day all the time. I have two questions for you though.
    1) do you have some kind of follow bottom/subscription option
    2) is it possible for you to put nutrition facts on your posts (mainly calories)?

      I will have to decline your request for nutrition info. It will turn blogging into a chore, and then I’d hate posting. Also, I like to think of this blog as a celebration of real food, and not “diet food,” so I don’t want to focus on calories.

      I totally understand, blogging is supposed to be fun. However, I wouldn’t claim that oatmeal (or any other food) becomes “diet food” just because of nutrition info, I just like to know the information when I find recipes! But I respect your choice, and I still going to try out probably all the recipes you’ve posted 🙂

      Why are people so lazy?! She took the time to come up with this awesome recipe, take 5 minutes (or less) and plug the ingredients into a calculator online and find out!

    Does this work without chia seeds? Or is there anything to replace them with?

      Yes! In fact, I just made overnight oatmeal last night without it, and it turned out fine. I saw it in all the other recipes, so I thought it was required, but here’s what I’ve learned:

      When a “pureed” fruit (banana, pumpkin, applesauce) or yogurt is used, no chia seed is necessary. Your oatmeal will end up being naturally creamy.

      If you DON’T have a fruit like that (if you’re using fresh berries, or just chocolate chips or something), the chia seeds help make the oatmeal creamier. It’s not REQUIRED, but it will improve the texture. However, you could also use flax…or yogurt!

      In other words, for THIS particular recipe, because there’s banana involved, the chia is definitely optional.

    Just made this recipe again! This time around, I decided to follow the measurements for Oatgasm’s oatmeal “ice cream” for the Banana Split Overnight Oats recipe on her blog in hopes of achieving a thicker, creamier consistency. I cut the milk to a 1/4 cup, kept the yogurt amount the same (used Greek as it yields MUCH creamier results than regular yogurt), and decided (on my own) to increase my quick-cook steel-cut oats to 1/3 cup.
    I can already tell this will be a winner! 🙂

  12. This is delicious warmed. I used vanilla coconut milk in mine. Then when I got ready to eat it I sprinkled it with walnuts. Yummy! Thank you for the recipes.

    I made this for the first time Saturday night and had it for breakfast Sunday to celebrate the time change =) It was AMAZING! I used 1/2 cup of skim milk, the chia seeds, banana, rolled oats, and vanilla but skipped the yogurt. It was DELICIOUS, sweet and creamy. I am training for a half marathon and am going to try this for breakfast on my long run days!

      admit that I was never able to eat oatmeal as I just couldn’t get past the consistency. In cookies/other recipes that would over up the consistency, it was wonderful. Then……I found your website. Yesterday afternoon, I made the Blueberry Maple Overnight Oatmeal and the Raspberry Vanilla Overnight Oatmeal (no raspberries in house so I substituted blackberries – OMG. This morning, I ate the Blackberry Vanilla Overnight Oatmeal and I found myself not getting hungry until way after lunchtime. Can’t wait to try the Blueberry Maple. Please……more overnight recipes or…….is there an easy way to convert some of your other delicious ideas? Also, I used unsweetened Vanilla Almond Milk in these 2 recipes if anyone else wants to try it – turned out AWESOME…

    Hi Lauren! So excited to find your site! With 5 boys and a newborn baby girl, baked oatmeal and overnight oats are great for an exhausted, busy mom and 5 very hungry boybarians!       Yay!! I have kept some overnight oats in the fridge for as long as a week, and it was still tasty! However, it depends on the specific recipe because some ingredients (bananas!) last longer than others (strawberries). I make all my oatmeal for the week on Saturday and Sunday, so I frequently eat oatmeal that was made five days earlier. 🙂

    I make this recipe by mashing the whole banana, and then heating the oatmeal in the microwave in the morning. The oatmeal tastes delicious! I love the light, creamy texture of the banana and chia seeds provide.
