Pumpkin Nut Butter Oatmeal
It’s so appalling to consider how I used to hate pumpkin. Why were my taste buds so worthless for twenty years?! Recently, I’ve been a fiend for anything and everything pumpkin.
I’m also a fiend of anything nut or nut butter related. I recently saw a pin for a recipe for pumpkin oatmeal topped with almond butter, and I quickly logged the idea on The List. (Unfortunately, I cannot find this recipe for the life of me. If you know what I’m talking about, please comment below so I can give inspiration credit to the original poster!)

Pomegranate & Chocolate Chip Oatmeal
Got some extra cash to throw around? Buy a pomegranate!
The other day, I saw a fantastic recipe on Pinterest and Finding Vegan for Cocoa Nib and Pomegranate Overnight Oatmeal. I was immediately intrigued, but I knew I wouldn’t be making it anytime soon; my typical budget does not allow for pricey pomegranates!
Green Apple and Walnut Oatmeal
I went apple picking for the first time today. Or the second…maybe. I grew up near an orchard, and we went there once on a class field trip, but I can’t remember if we actually got to do any picking, or if we just walked around the rest of the place. Pumpkin Pie Oatmeal
Yep. My Pumpkin Pie Baked Oatmeal was a hit, so I decided to try it out on the stove as well. 🙂 Everything’s better on the stove, right? Right??
This recipe is perfect because autumn is definitely setting in. I know this because each day when my alarm goes off at 5:35, it’s a little darker outside. 🙁 And each morning, it’s a little chillier on our walk to work. Autumn is admittedly my favorite season, but I’m not a huge fan of those two particular characteristics.

Banana Oat-Quinoa Porridge
I’ve only made breakfast quinoa once or twice. It was delicious, but it always bothered me how one serving is only 1/4 a cup (as opposed to 1/2 cup of oats, which feels giant in comparison).
I found a solution: an oat-quinoa hybrid! I had no idea what to expect, but I really enjoyed it. The texture and taste were oddly reminiscent of rice pudding.

Grapefruit Blueberry Oatmeal
I’ve posted a lot of blueberry recipes lately, and I’m not apologizing for it!
But before I get into that…do you know what today is? It’s September 1st. Today is the one-year anniversary of my first day of vegetarianism. As I explained in my “About Me” page, I originally just planned to try one month without meat. About halfway through the month of September, I already knew (at least subconsciously) that I would not be going back. I was in love with it.
Peach Blueberry Oatmeal
Strawberry and bananas, cherry and lime, rhubarb and strawberry… None of those classic fruit combinations appeal to me as much as peach and blueberry. As much as I love a traditional peach cobbler, I’m all for adding blueberries to the equation sometimes.
As I’m writing this post, it just occurred to me that I used to not like blueberries. I liked blueberry-flavored things, like the fake blueberries in Betty Crocker muffin mixes, but the real thing grossed me out entirely. To be honest, I can’t remember really enjoying a blueberry until I made my Baked Blueberry Muffin Oatmeal…and that was not that long ago! Now, a quick click on the “blueberries” label at the bottom of this post shows just how enamored I am with them!
Berry Kiwi Oatmeal
My two weeks of professional development training are over! Next time I return to the school, it will be with actual students. Hurray!
This also means summer is coming to an end, and I’m on a frantic mission to enjoy all the summer fruits while they’re still around. With a bowl of oatmeal, naturally. 🙂
Sweet Potato and Cranberry Oatmeal
Having this job means packing lunches again. My entire first week, I stuck to two meals. The first was a PB&J sandwich. Shocking? No, not at all. 🙂
The second was a baked sweet potato. With Earth Balance. And cinnamon. And a little salt. And dried cranberries. GOOD GRACIOUS.
Dark Chocolate & Orange Oatmeal
Woohoo! I’m back! It feels great to post a “regular” post again…although I’m still getting used to the lighting in my apartment. You’ll have to put up with that for a while. 🙂
I was a little nervous about how this recipe would turn out. It seemed like a great concept, but would they pair well in oatmeal? Orange is surprisingly bland in oatmeal, much to my sadness. It doesn’t hold up like grapefruit does! However, I really enjoyed this recipe, and not simply because it was my first bowl of stove-top oatmeal in over a week. 🙂 I was able to taste the orange, and not just the dark chocolate. Most of the chocolate recipes are pretty “heavy” because they taste like desserts, but this one is much more refreshing because of the citrus.
