Caramelized Banana Oatmeal
Yep. I’m getting fancy.
In case you didn’t get the hint from Wednesday’s banana muffin post, my mom hooked me up with a mountain of bananas this week. I had other plans for oatmeal, but when I saw the need to use up bananas, I had to replan. That’s when I came up with this idea.

Candy Cane Cookie Dough Oatmeal
There will be two reactions to this post. Half the people will rejoice the festive nature or “special treat” aspect of it. The other half will be appalled that I just put candy on top of my breakfast. To both of these camps, I say: happy holidays?
I couldn’t resist doing something with candy canes, despite the fact that I would consider myself in the second aforementioned camp. I would never crumble up a Snickers bar over my oatmeal, after all. However, once this idea came into my head, I just couldn’t ignore it. It had to be done.

French Toast Oatmeal
In case you’re too cool for refrigerator oatmeal…
…here’s the classic French Toast Oatmeal in stove-top form. I made this one for my roommate this weekend, and it literally took me about four minutes to throw together from start to finish. It’s perfect for converting those who have not yet seen the light. đ (more…)
Eggnog Oatmeal
Sadly, my family was never an eggnog family. It wasn’t until I was in high school that I asked my mom what it was, so she bought me a carton of the store-bought variety so I could try it. I’ll admit now that most of it ended up being poured down the sink two weeks later (i.e. I was unimpressed). I’ve never had homemade eggnog, but it’s never been high on my priority list for foods to try, either.
Now that I avoid dairy, I have even less desire to try the real stuff. However, I was exceptionally curious to try the dairy-free varieties after reading some reviews. I saw the rice ‘nog appear in Whole Foods even before Thanksgiving, but it wasn’t until a week ago that I finally captured the coconut ‘nog! As soon as I spotted it on an obscure refrigerated shelf in the corner of the store, I snatched a jug up in less time than it takes for my roommate to complain whenever we play Christmas music. đ

Grapefruit Mint Oatmeal
Happy fifth day of Christmas! đ Oddly enough, this recipe feels a little more summery than a typical December post, but the weather here has been unseasonably warm, so it seems fitting. I even wore a skirt yesterday! What’s the weather like in your area?
This oatmeal reminded me of a grapefruit mojito I had back in August. In all honesty, anything with fresh mint is delightful, and anything with grapefruit is magical, so the combination is perfect. This is actually a really simple recipe that you can throw together with less than five ingredients; however, I’d also recommend adding nondairy yogurt. That gives it the wonderfully creamy texture that most porridges offer.

Cran-Apple Oatmeal
Growing up, my elementary school was across from my grandmother’s apartment. On days when it was too cold to walk home, I would go to her apartment until my mom could pick me up after work. She’d always make me a snack, but it’d be something simple like peanut butter spread on saltine crackers. It sounds dull, but I loved it.
Along with the snack, she’d also have juice for me. I always thought her juice selections were strange and “grandma-ish,” like cranberry or cran-apple. For some reason, though, drinking it at my grandma’s house while I watched Arthur on PBS made it seem special, even if it wasn’t my favorite.

Dark Chocolate and Grapefruit Oatmeal
This recipe is only for those who love bitter. Sweet tooths need not read on.
First, you take a bitter grapefruit. Then, you stir in some bitter dark cocoa powder. Then, you top it with some more bitter grapefruit. If you’re wrinkling your nose, then save yourself some time and just click here instead. If you’re salivating like I was, read on.

Elvis Oatmeal
When my roommate told me that NYC was still without power below 26th Street, a few places ran through my head. What did Union Square look like? Was Trader Joe’s all right? Did Beyond Sushi weather the storm?
And what about PEANUT BUTTER AND CO.??!!
If you haven’t heard of Peanut Butter and Co., it’s a tiny little shop on Sullivan St. (off Bleecker St.) that specializes in peanut butter sandwiches. I’m serious: check out their menu. It’s one of my absolutely favorite places in the city. Not only do I love gourmet peanut butter sandwiches, but the staff there is positively delightful, and the decor is retro and fun.
Yogurt Oatmeal
Stupid easy: that’s how I would describe this recipe. Essentially, you take the basic cooking instructions on the oatmeal carton. Then, you add your yogurt of choice. That’s it. If you want to get fancy, you add some other stuff. Whatever stuff you want.
Now, let me be clear: yogurt in oatmeal is not everyone’s cup of tea. In fact, the first time I tried it, I hated it. I used a very basic strawberry (dairy) yogurt, and the tartness of the yogurt really turned me off in the oatmeal. However, I know it’s a genuinely popular concept (even my mom does it!), so I tried it again, except with nondairy yogurt.

Coconut Oatmeal with Strawberries and Chocolate Chips
How do you feel about chocolate chips for breakfast?
Like me, many of my followers are health-conscious. Therefore, I’m extremely curious about the general consensus on chocolate chips for breakfast. Most chips involve a myriad of unwelcome ingredients (ex: milk, sugar, hydrogenated oils). I’ve also seen a variety of brands make their chips vegan and/or “healthier” by using cocoa liquor instead of actual cocoa to flavor the chips. My current stock (from Trader Joe’s) falls into that category, and although it doesn’t necessarily impress me, I prefer it over some other sketchy brands I’ve seen.
