Watermelon Coconut Overnight Oatmeal

Watermelon + oatmeal has been an equation that I’ve been trying to solve for quite some time. I tried this Melon Berry Overnight Oatmeal last summer. Truthfully, it was okay. But it most definitely wasn’t my favorite. I’ve been dying to give watermelon another try, but I just couldn’t crack the code. How do you make a watermelon oatmeal that is 1) not too runny, and 2) sweet without being heavily sweetened?

Coconut milk (from the can) is so thick and creamy that it would compensate for watermelon’s . . . well, watery-ness. The other answer came from my partner-in-crime (well . . . sort of. The same week that I posted my mediocre Melon Berry recipe, Meghan posted a ten-thousand-times-better Watermelon & Mint recipe. She used the most intriguing method. I decided to follow her method, but using my ingredients.

Watermelon Coconut Overnight Oatmeal

I spent a lot of time deciding whether or not my recipe was unique enough to post on here. Ultimately, I decided to link you to her recipe and just let you know what I changed. Because I love Meghan, and I want you to go check out her blog.

Random Recommendations:

Watermelon Coconut Overnight Oatmeal

Prep Time: 5 minutes

Cook Time: 3 minutes

Yield: serves 1

What you'll need:

    For watermelon mixture:
  • 1/2 cup cubed watermelon
  • 1/4 cup coconut milk
  • 2 tbsp. quick or old-fashioned oats
  • splash of lime juice (optional)
  • maple syrup to taste (I used about 2 tsp)
  • For overnight oatmeal:
  • 1/2 cup old-fashioned oats
  • 1/4 cup coconut milk
  • pinch of salt
  • chia seeds (anywhere between 1 tsp - 1 tbsp)
  • watermelon mixture from above
  • For topping:
  • cubed watermelon
  • unsweetened coconut chips

How to make it:

  1. Follow the instructions on Meghan's recipe to make the overnight oatmeal. Omit the mint, use coconut milk, and add lime juice and chia seeds.
  2. Store overnight (or several hours) in the fridge.
  3. In the morning, toast coconut chips over medium heat until they turn a golden brown. Make sure you keep an eye on them and stir/toss them often to keep from burning.
  4. Top oatmeal with more cubed watermelon and the toasted coconut chips. Enjoy!
