Matcha #bowlofzoats cooked in coconut water and topped with dragonfruit, Indian mangoes (say whut?), dates and what was left of my coconut butter. Unripe Indian mangoes are typically served as an appetizer in the Philippines with shrimp paste for dipping to balance the sourness out, but this is my favorite ripening stage of theirs: the in-between of going from green to yellow, just the right mix of sweet and sour while still firm–you can’t blame me for heeding to their call to be starred in my tropical-ish breakfast on a rainy Saturday morning ? #oatmealartist
