Pumpkin White Chocolate Macadamia Oatcakes

Because white chocolate chip macadamia nut cookies are the best.

Because pumpkin makes everything better.

Because pancakes made with oat flour keep the tummy happy.

Because vegans deserve pancakes, too.

Because you don’t have to eat dairy to eat white chocolate. 🙂

Pumpkin White Chocolate Macadamia Oatcakes

Prep Time: 15 minutes

Cook Time: 10 minutes

Yield: serves 1

What you'll need:

  • 1/3 cup milk of choice (I used plain almond milk)
  • 1/4 tsp apple cider vinegar, or lemon juice
  • 2/3 cup rolled or quick oats (I use Country Choice Organic)
  • 1/3 cup pumpkin puree
  • 1/2 tsp vanilla extract
  • rounded 1/2 tsp baking powder
  • 1/2 tsp pumpkin pie spice (or cinnamon)
  • pinch of salt
  • optional: 1-2 tsp. maple syrup (I omitted)
  • handful of vegan white chocolate chips
  • handful of chopped macadamia nuts

How to make it:

  1. Combine milk and vinegar in a small bowl or cup and let sit for ten minutes.
  2. Put all pancake ingredients (including milk-vinegar mixture) except for the white chocolate chips and macadamia nuts in a blender or food processor and blend until smooth. Add extra liquid if necessary (just a tsp or so at a time). It should have the consistency of paint.
  3. Add in the white chocolate chips and macadamia nuts and pulse a couple times, just to incorporate them throughout the batter.
  4. Heat a griddle pan over medium low heat.
  5. When griddle pan is ready, spray with nonstick cooking spray (it only needs a little bit!), and use a large spoon or a small scoop to pour pancakes onto the griddle. I made small pancakes, so I used a large soup spoon, and it worked perfectly. Generally, don’t go any bigger than 1/4 a cup, but I find that too big still.
  6. When bubbles have formed at the top of the pancake, flip over and cook for another minute. Repeat until all the batter has been used!
  7. To serve, add your topping of choice. Maple syrup is fine, but so would a nut (or coconut) butter. If you're lucky enough to own some macadamia nut butter, that would be the obvious choice!

Pumpkin Spice Latte Oatmeal (Revisited)

Is this a new recipe? Kind of. Okay, not really.

However, it’s been so long since I’ve experienced my Pumpkin Spice Latte Oatmeal, and I wanted to celebrate it. To make this version special, I added steamed milk, which is a nice wink to the actual “latte” side of this recipe.

pumpkin spice latte oatmeal (6)Unfortunately, I used almond milk for this recipe, and almond milk is not great for making steamed milk. Look how unfrothy it is. 🙁 If you want to flood your oatmeal with steamed milk, I highly recommend soy milk. It froths up so beautifully! My almond milk just formed a couple bubbles, as you can see.

German Chocolate Oatcakes for One

I’m so sorry for the break. It seems that it’s happening more and more frequently. I’ll just say that everyone who promised me my second year of teaching would be easier was horribly WRONG! It’s undoubtedly ten times harder. I think I took ONE break from my blog last school year, and it was only to celebrate my birthday week. I’ve already taken two or three this year. It’s rough.

Herbed Pumpkin & Leek Oatmeal

Now that I’m obsessed with herbs (I even have a tolerance of cilantro now), I have been quite eager to try sage lately. It’s an herb I’m not too familiar with, the exception being that it’s used in sausage.

I noticed that it is commonly paired with fall and winter flavors, such as squash or Thanksgiving stuffing. Thus, I was eager to try this recipe. Although many of my herb posts lately have been “sweet” in nature, this one is decidedly savory, thanks to the inclusion of leeks. (more…)


Choco-Pumpkin Baked Oatmeal Parfait

I made this recipe weeks ago, but it took me forever to share it because I didn’t like the pictures. Once I edited them, I realized they weren’t that bad, but still nothing great.

Ever since making my Brownie Baked Oatmeal Parfait, I have wanted to do something similar. I’m a huge fan of chocolate pudding made from avocados, so instead of using yogurt (as I did in the aforementioned parfait), I decided to layer it with some clean, vegan chocolate pudding!  (more…)

I’m growing pretty tired of the term basic and its association with pumpkin. I could rant about the word basic as a yet another derogatory label for women, but I don’t think that has a place on my blog, so I’ll just stick to the pumpkin part.

Nutty Pumpkin Berry Oatmeal, + Other Hacks for Banana Haters

Dear Banana Haters,This post is for you. Although it may seem like we play for opposite teams (I’m all like, “BRING ON THE ‘NANAS,” and you’re all, “UGH, I GAG!”), we’re not all that different.

You see, as much as I love (and NEED) my daily banana(s), I also know what it’s like to loathe an ingredient. Even before my transition to a herbivore lifestyle, I have never appreciated the taste of sour cream. I think it’s pretty vile, in fact. If my favorite blog kept making oatmeal topped with sour cream, I would be pretty ticked.

Therefore, I have a solution. You have probably noticed by now that most of my favorite recipes contain banana. Not wanting you to miss out, I have compiled a list of hacks for all you banana haters…including one new recipe (pictured below–scroll to the bottom of this post for the recipe)!

Pumpkin Chocolate Swirl Oatmeal

I’ve made several pumpkin recipes, and they all carried a similar theme; in particular, they all included pumpkin pie spice.

I know I haven’t posted a new recipe since Tuesday, but I decided it was vital for me to spend this week relaxing and exploring the city with my sister, who is visiting from Minnesota. Instead of posting a new porridge today, I created a round-up of all the recipes you could make using some of your potential leftovers from Thanksgiving (which, by the way, is my FAVORITE holiday…even as a herbivore!).

I have so much to be thankful for…seemingly more so than previous years! I’m thankful to have “made it” in this city. I’m thankful to finally be a teacher. I’m thankful for plant-based options popping up more and more at restaurants around the city. I’m thankful for peanut butter on a genuine NY bagel. I’m thankful for this blog and the joy it brings me every week, as well as the love and support given to me by Country Choice Organic. I’m thankful for sauteed kale (because JEE-ZUSS it’s so good). I’m thankful for warm fleece jackets, hot tea, electric blankets, and space heaters. I’m thankful for my family, friends, and everyone who reads my blog (YOU)!

Recipes for Thanksgiving Leftovers

Do you have leftover chestnuts sitting in the fridge? I don’t know about you,

but I don’t know many uses for chestnuts. Putting them into a creamy, chocolaty porridge
seems like the perfect solution to me!

Pumpkin, Apple, & Cranberry Oatmeal

Didn’t use all the pumpkin puree for the pies? Mix it into this recipe! You could use

either dried or fresh cranberries, or (my new personal favorite) cranberry sauce!

Okay, fine, so it’s not “oatmeal,” but these little baked gems are a unique

way to use up those few extra sweet potatoes.

If chocolate isn’t your thing, use your chestnuts in this flavorful recipe. The best part
is that it goes beautifully with cranberry sauce stirred in the top!

Did you serve squash at your table? This savory porridge uses butternut squash, but
any fall squash could work here. It’s like risotto!

Extra sweet potatoes? No problem. Even if your potatoes are already mashed

and seasoned, they would probably work here as long as you didn’t add savory
flavors. I don’t think herbs, salt, and pepper would be a good match here. 🙂

This is such a fun way to use up cranberry sauce. Paired with pecan butter, it makes

such a delicious alternative to the already-wonderful peanut butter and jelly.

Perhaps you’re bored of Thanksgiving flavors and are looking for something

completely different. I highly recommend mixing your sweet potato with some oranges
for this recipe. To be honest, this is one of my favorite recipes I have for sweet potatoes!

without my recent stuffing-inspired recipe. This porridge is perfect if you have a bunch
of random ingredients like fresh herbs, celery, corn, chestnuts, and cranberry sauce
to use up. You can really throw in whatever you want. Potatoes are welcome!
