Lavender Latte Oatmeal

This week’s oatmeal is inspired by two wonderful things. The obvious inspiration is that I literally had a lavender latte last month at Watercourse, my fave vegan spot in Denver. As most of you know, I’m more of an espresso type, but I decided to branch out and try a fancy latte. Considering lattes aren’t my style, I really enjoyed this! I’ve wanted to transform it into oatmeal ever since.

As for the other inspiration …

Remember back in August when I gushed about lavender and its role in my mental health? Well, I have an announcement to back this claim up. Some of you already saw it on Instagram, but for those of you who didn’t…

Pumpkin Earl Grey Oatmeal

Yep, another earl grey recipe. What can I say? It adds a nice touch. It’s almost like vanilla extract: it adds just a hint of somethin’ somethin’ that makes everything else taste better.

Pumpkin, Orange, and Rosemary Oatmeal

I’ve thrown a lot of multi-component oatmeal recipes at you lately. Sorry about that. Let’s go simple this week, alright?

It’s officially time to break out the pumpkin. I’ve got plenty of pumpkin recipes I already love, such as:

And there’s many more where that came from. Now meet the newest entry in my pumpkin collection.

Savory Pumpkin and Kale Steel Cut Oatmeal with Sausage

Looking for healthy, hearty meals during the holiday season, without sacrificing the classic flavors of fall and winter? This steel-cut, savory porridge might be exactly what you’ve been looking for.

The kale is sauteed with garlic and seasoned with good ol’ salt and pepper (and nutritional yeast, if you prefer, which I do). The pumpkin puree adds creaminess and just a tiny bit of earthy sweetness, just enough to counter the saltier kale and sausage (but not enough to make the dish sweet). Then, the Italian-style sausage on top adds a peppery, chewy bite.

Pumpkin, Brown Sugar, and Fig Oatmeal

I’ve been doing this thing for a week or two now where I don’t buy bananas so I can’t make Cardamom Fudge Oatmeal (my favorite). It’s amazing how that forces me to make different recipes, like this one.

pumpkin-brown-sugar-and-fig-oatmeal-3

This recipe might stick out to you compared to my usual repertoire because of the brown sugar. I think this is my first one with brown sugar, ever. Typically, when I want a brown sugar flavor, I just use a drop of molasses. However, I recently bought brown sugar to make (a veganized version of) Allison’s Chocolate Chip Cookies con mi novio. Since I have it, I’ve been playing around with it in my oatmeal. (more…)

Gingerbread Persimmon Oatmeal + Product Review: BetterOats

Lately, I have been on the constant prowl for recipes that would work well with persimmon. My philosophy is this: persimmon has a muted but pleasant flavor, and pairs best with bold flavors. That is why I used this delightful fruit atop my Chai-Spiced Pumpkin Oatmeal; it contributed a calm sweetness to an otherwise “loud” oatmeal base.

Next up? Gingerbread.

Gingerbread Persimmon Oatmeal by the #oatmealartist #vegan #betteroats

I have made gingerbread oatmeal a variety of ways: with banana, with sweet potato, and with pumpkin. Truthfully, they all work beautifully, and it all depends on what “background flavor” you want in your life (i.e. just pick your favorite). Alternatively, you could use grated zucchini or yellow squash for a nutritional filler that adds no flavor. (more…)

Pumpkin Cream Cheese Baked Oatmeal

I have many seasonal recipes on “The List” that go unpublished every year. These ideas stay permanently unchecked on The List, waiting for its designated “food season” to make its big debut, but never seeing the light.*

Such was the case with last year’s Peppermint Brownie Baked Oatmeal. I always wanted to make this during the holiday season, but it took multiple years to actually get it done.*
