Jalapeno Popper Savory Oatmeal [Guest Post]

This recipe is the final of three savory recipes that won the Savory Oatmeal Contest. In case you missed them, here are Sarah’s Curried Pumpkin Basil Oatmeal and Lyndsey’s BBQ Sweet Potato Oatmeal.

My name is  Joz Lee. Short story: When I got married, I did not know how to cook. My husband was a good cook and  I learned from him. Then we traveled to different states and countries; wherever we traveled, I was involved in learning and participating in the FOOD. Then I had a chance to take a nutrition course and got certified. After that I fell in love  with food. I find a new recipe and I follow it to a ‘T,’ and then I improvise, change, and often don’t measure out the ingredients!  It almost always comes out perfectly.

Pineapple Jalapeno Oatmeal

I have discovered an imperfection in Trader Joe’s. It has taken me a year, but I finally found it. Trader Joe’s does not sell individual jalapeño peppers. If you wish to purchase one, you must buy a container of them that holds SEVEN PEPPERS.

Because who doesn’t need seven jalapeño peppers at one time?!

Feeling clever, I purchased one of their “guacamole kits” instead. It contains ONE jalapeño, two avocados, some garlic, a lime, and two tomatoes. I can use the avocados without a sweat, and I can easily find an excuse to use a lime. The garlic will remain usable for weeks and will definitely serve its purpose eventually. The tomatoes, however, will be a struggle. I might try and make tomato sauce or something (I have garlic, after all!).

Savory Pizza Porridge

I always thought this recipe was “pretty good,” but I became quite fond of it over the summer of 2014 when I moved into my new apartment and did not have a working stove (ugh). I was also only there for a few days before flying to Minnesota, so I didn’t want to invest in many groceries. Thus, my go-to meal twice a day was a very plain pizza porridge made in the microwave.

It was pretty much just oatmeal, marinara, two florets of broccoli (I was trying to make the crown last for the entire week), and some Daiya. You would think a week of that would be sickening, but instead, it strengthened my love for it. I now make this fairly regularly!

Cajun-Spiced Oatmeal with Red Pepper, Black Beans, and Spinach

My mouth is on fire from this one!

To tell the truth, I don’t know much about Cajun cuisine. It’s not exactly a cuisine that Midwesterners ever experience, sadly (we fear cayenne pepper), and it’s not the most vegetarian-friendly cuisine, either. However, I recently discovered Cajun seasoning, and I love it. I made these awesome crunchy Cajun tofu sticks once, and they were so great . . .
