Peach Rosemary Oatmeal

I’m desperately trying to enjoy as many peaches as possible this August. I just adore that flavor and allllll that delicious juice. And considering my never-ending obsession with rosemary, it just seemed like the perfect experiment.

My hypothesis was correct: peaches + rosemary = happiness.

10 Oatmeal Recipes to Celebrate National Peach Month

August is National Peach Month, oatmeal lovers! Did you know it’s my favorite fruit? It is. I mean, mango definitely gives it a run for its money, but as of now, peach still holds the key to my #1 spot. Peach Basil Oatmeal

Truthfully, I have wanted to make this recipe ever since I made my Strawberry Basil Oatmeal three years ago!! To celebrate the third birthday of that beautiful porridge (July 15, 2013), it seemed fitting to publish its peachy cousin. I think basil pairs well with most fruits, but strawberry and peach are probably my favorite candidates. If you’ve yet to try herbs in non-savory recipes, you are missing out on a whole category of DELICIOUS.

I know. . . I’ve been pumping out a lot of “fancy” recipes lately. Everything involves blenders or fancy equipment or annoying cooking techniques or expensive ingredients.

But this one’s simple. Super simple.

Spiced Peach & Dragon Fruit Oatmeal

Dragon fruit! Cross this one off my list of fruits I’ve never tried. I decided recently I wanted to buy one after seeing Dani and Sophie posting pictures of them on Instagram all the time.

I’m unfortunately going through “empty out the fridge!!!” mode again; it seems like I was doing that just a couple weeks ago. (Because I was.) Before, it was because of my move to Brooklyn. Now it’s because of my trip(s) to Minnesota, Seattle, and Vancouver. To those of you who follow me on Instagram, be prepared for excessive photos. Traveling makes me camera happy.

Anyway, I wasn’t sure what to pair the dragon fruit with. I didn’t even know what it tasted like! Not wanting to purchase more produce, I considered the options that were already available in my (UNREASONABLY SMALL) Brooklyn fridge: apples, grapefruit, banana, and peaches.

Apricot Cardamom Oatmeal

Remember my angst against apricots?? How they are basically just wannabe peaches? Well, I have discovered one perk they have over peaches: they have a more powerful flavor than peaches, making them more enjoyable in oatmeal. Peaches tend to “disappear” when mixed into oatmeal, but apricots are still pretty in-your-face.

As a result, I used apricots for this recipe even though I originally envisioned it with peaches. Of course, you could use either.

Peach Almond Oatmeal with Pomegranates

Mmkay. Time to be vulnerable.

I’ve been somber lately. Maybe even a little hopeless.

My apartment does not offer great lighting. My window faces almost directly south, meaning the sun never fully shines inside, despite our big windows. I cannot take pictures outside without walking straight onto the bustling sidewalks of New York and lookin’ like a fool. I try taking pictures near my bedroom window during the brightest time of the day, but they still turn out grainy and discolored.

I have a pretty great camera (the top-rated point-and-shoot on the market), but it functions best in natural lighting. It’s not ready for indoor, dimly-lit food photography. Having just signed a lease on my first how-the-heck-does-it-possibly-cost-this-much NYC apartment, I can’t even fathom buying a fancy camera at this point.

Peach Banana Muesli

Week 6 of not having a stove. ?

It’s becoming painful, yo. When so much of your happiness relies on your ability to cook and prepare food, not having a functioning stove is a terrible blow. We’ve been dealing with our electronic company for weeks trying to convince them to turn on our gas. Every time, it’s “You need to do X.” So then we do X. We wait. We call back. They say, “You did X, but you still need to do Y.” We say, “You never told us that, but okay.” We do Y. We wait. We call back. Etc.
