Cherry Kiwi Oatmeal

My recipe calls for dried orange peel, which is my latest obsession. It adds such a natural and subtle brightness to foods (and is much less potent than, say, lemon or orange extract). I think it’s a great way to add flavor instead of resorting to sweeteners.

Okay, I’m relish-obsessed. I definitely go through phases with my food. There was 2012’s baked oatmeal phase. 2013’s overnight oats phase. 2014’s breakfast cobbler phase. 2015’s zucchini phase and flavored PB2 phase. Apparently, this is my relish phase.

Pineapple Kiwi Oatmeal with Coconut-Peanut Butter

I used to think nut butters didn’t work with tropical fruits. I’ve recently decided that you can make nut butters work with anything if you’re determined enough. The best part about adding a nut butter to a tropical oatmeal is that it brings some earthy, hearty warmth to an otherwise bold and tangy porridge.

Alright, so I had this super idea for an oatmeal regarding my beloved Pseudo Vegan Lemon Curd. It would have been perfect, but my uncharacteristic carelessness came back to haunt me. Tropical Oatmeal

This recipe is so obvious that it’s almost embarrassing that I haven’t posted it yet. I have so many tropical-themed recipes, but why not combine them all into one fabulous breakfast?

Mango, pineapple, and coconut were obvious choices, but my decision to include banana was a last-minute addition. I don’t know about you, but I always forget bananas are a tropical fruit.

Coconut Kiwi Oatmeal

Coconut butter is THE most luxurious ingredient in the entire world. More luxurious than pomegranates. More luxurious than pistachios. More luxurious than dark chocolate.

(Let me get one thing straight: coconut butter is NOT better than peanut butter. However, because coconut butter is a rarity for me, it is more exciting and special. But in the end…peanut butter FTW!)

Kiwi, Green Apple, and Pistachio Oatmeal

Last week, I talked about how crazy my life was as a teacher. I’m happy to announce that I’m slowly getting my “ish” together. I enjoyed a lovely 15 hours grading essays over the weekend (yippee), but besides that, I’m feeling things slowing down.

Anyway, this recipe features an odd assortment of ingredients. Essentially, I was inspired by green. I can’t remember how this recipe started in my imagination, but I simply kept adding on to it with more green things. It continued to morph as it went through the process. Even when I first made it, I decided to add lemon extract at the last second. No regrets–the touch of citrus made these ingredients dance. Lime juice might be pleasant, too.
