Matcha-Lime Overnight Oatmeal with Strawberries

I’ve recently realized that matcha tastes better in overnight recipes. I don’t know what it is about sitting in the fridge for a few hours, but it does wonders to the unusual flavor of matcha. It subdues the bitterness and leaves you with a sweet oatmeal with a pleasant matcha flavor.

Lychee Berry Oatmeal

I love lychees (and more specifically, lycheetinis), but I had never purchased one, cut into it, and eaten it fresh–until this month. I’m not sure why, but I found it incredibly intimidating. However, once I cut into that unusual peel, I was treated to that wonderful, unmatchable lychee flavor. It’s worth conquering the fear!

Lychee Coconut Overnight Oatmeal

Lychees and coconut milk. That’s it. I wanted to add mango so badly, but I knew if I did, I wouldn’t be able to taste the lychee as well. Considering how rare and special it is for me to possess fresh freakin’ lychees, I wasn’t about to cover it up with the (admittedly delicious) flavor of mango. In my opinion, when there’s a fruit you rarely have around, you let that fruit be the goddamn star.

Cantaloupe Date Oatmeal with Mint-Melon Relish

These oats are ~classy AF~

Apple Oatmeal with Chocolate Tahini and Coconut

Friends, I have two important hacks to show you today.

The first involves my never-ending search for apple perfection.

I have written before on the perfect way to cook apples in oatmeal to get a creamy porridge and not a chunky and disjointed one. Now, I have a new method.

At the end of the day, you can add your apple however you damn well please. However, here’s my new favorite: cut the apple into halves or quarters. GRATE at least half the apple (I grate three quarters), and dice the rest.* The grated apple works on two levels: 1) It is easier to digest for poor souls like me with incompetent intestines, and 2) It creates a smooth and consistently flavorful porridge. You could technically grate the entire fruit, but reserving some of the apple for dicing provides a bit of texture for extra pops of apple now and then.

*I use small apples, so I use the entire thing, but if you’re using a large apple, you may want to only use a portion of the apple and save the rest for later. Use your judgment.

Cowboy Cookie Baked Oatmeal

I get unreasonably excited every time I put out a new cookie oatmeal. This is one I have wanted to make for quite a while. Actually, I first wanted to make a monster cookie baked oatmeal, but that would require the use of M&Ms, and then I would have to splurge on vegan M&Ms, and I just wasn’t ready to spend my money on that. Just as I feel about vegan marshmallows. Maybe someday.

As much as I imagined myself making this, I wasn’t 100 percent sure what actually goes into a cowboy cookie. Truthfully, I’m not sure if I’ve ever even had one. All I knew is that there were nuts and chocolate involved.
