Sweet Potato Curry Oatmeal

As with many non-city folk, my experience with foreign cuisines was limited to Italian and Mexican food. Give me lasagna or a taco (Americanized, of course), but sushi? No. Tapas? What’s that? French? Yuck. Russian? Nah. And there were definitely no curries.

My first time eating beyond the Italian/Mexican standards was during my trip to San Diego after college graduation, which was the first time I had sushi. Surprisingly, it was love at first sight. Shortly after, I experienced Thai. Once I was living on the East Coast, sushi and Thai became frequent eats, and pretty soon I was trying French, Indian, Greek, Ethiopian, Ukranian, Spanish tapas, and more.

I will admit, it took me a while to appreciate the taste of curry spices. It’s a very unique blend of flavors that my tongue needed to adjust to. It took some time, but now I’m a fan. My favorite way to eat it is with sweet potato, so I’ve wanted to make this porridge for a while.

A year ago, I bought this curry powder from Trader Joe’s. This is what I used for my oatmeal. I know there are titles like “Yellow Curry” or “Mild Curry,” and unfortunately, I can’t tell you what this is. I’m not trained in curry. All I know is that this is called “Curry Powder” and it’s from Trader Joe’s. Use that information as you will. 🙂

Sweet Potato Curry Oatmeal

Sweet Potato Curry Oatmeal

Prep Time: 5 minutes

Cook Time: 5 minutes

Yield: serves 1

What you'll need:

  • 1/8 cup diced onion or leek
  • 1/2 cup milk, coconut recommended
  • 1/2 cup water or vegetable broth (or more milk)
  • 1/2 cup old-fashioned oats (I use Country Choice Organic)
  • 1 small sweet potato, cooked, peeled, and mashed
  • 1 tsp Trader Joe's curry powder or similar
  • 1/8 tsp salt
  • optional: fresh cilantro or basil, sliced green onion, fresh lime juice

How to make it:

  1. In a medium saucepan over medium high heat, cook onions or leeks (in broth, water, or oil; whichever you prefer) until translucent.
  2. Add milk, water, or broth. When liquid begins to boil, add oats. Return to a simmer and reduce heat to medium.
  3. Once more of the liquid has absorbed, add mashed sweet potato, curry powder, and salt. If using lime juice, add now as well.
  4. When you’re pleased with the consistency of the oatmeal, transfer to a bowl. If using, add optional ingredients such as fresh cilantro, basil, or green onion.
