Sweet Potato Chocolate Chip Baked Oatmeal

Confession: when I buy a bag of chocolate chips, they’re usually gone within a week or two. That’s why I will go such long stretches without chocolate chip recipes. If I had a bag in my kitchen all the time, I would go through about six a month. I just can’t keep my hands out of them!

So you can imagine my surprise the other day when I was digging for something in my cupboard and found the final few tablespoons of chocolate chips in a forgotten bag stuffed in the back. Since I had some mashed sweet potato prepared for oatmeal meal prep left in the fridge, I set to work on this recipe.

(You know, before I just ate the rest of the chocolate by the handful.)

I learned from my Sweet Potato Oatmeal & Chocolate PB2 recipe that chocolate and sweet potatoes are an oddly satisfying combination. Once again, this duo did not disappoint.

Obviously, you could top this with chocolate PB2, PB&Company Dark Chocolate Dreams, Nutella, etc. If you’re really feeling ambitious, you could try it with Chocolate Hazelnut PB2Faux-reo Cookie PB2, Salted Fudge PB2, or even Salted Pretzel PB2.

Sweet Potato Chocolate Chip Baked Oatmeal

Prep Time: 5 minutes

Cook Time: 20 minutes

Yield: serves 1

What you'll need:

  • 1/2 cup rolled oats (I used Better Oats Multigrain)
  • 1/4 tsp baking powder
  • 1/4 tsp cinnamon
  • pinch of salt
  • 1/3 cup mashed sweet potato
  • 1/3 cup milk of choice
  • 1/4 tsp vanilla extract
  • 1 tsp maple syrup (or more)
  • handful of semi-sweet chocolate chips

How to make it:

  1. Preheat oven to 350 degrees F. Spray a single-serving ramekin with nonstick cooking spray.
  2. In a small bowl, mix oats, baking powder, cinnamon, and salt until combined. (Alternatively, you can puree ingredients together in a food processor like I did.)
  3. In a medium-sized bowl, mix together sweet potato puree, milk, vanilla extract, and maple syrup.
  4. Add dry ingredients to mix ingredients and stir until combined. (Or process them all together.)
  5. Stir in chocolate chips.
  6. Pour into the prepared ramekin and bake for 20-23 minutes.
