Strawberry Mango Baked Oatmeal

You guys! A hurricane is coming straight at me! For someone who has lived her entire life in landlocked South Dakota, this weekend has been both exciting and nervewracking. At first, I was thrilled to experience the weak “leftovers” of the hurricane that the Northeast usually experiences (just so I could say I’ve been through a hurricane). However, the news quickly broke that we’re not getting leftovers: we’re getting the real deal.

Well, we’re still waiting for the rain to start. It’s windy and cloudy (it has been for days), but no storm yet. I was feeling kind of lazy today and didn’t feel like putting this post together, but I finally decided I should give you one last recipe before the Frankenstorm. (It’s possible you won’t see another oatmeal recipe from me this week!)

If you will not be affected by the storm’s this week, and you will have a electric-powered, fully functioning kitchen, try out this wonderfully tropical baked oatmeal! I recommend serving with shredded coconut for the ultimate tropical experience. 🙂 Meanwhile, I’ll be eating PB&J sandwiches and conserving our pitchers of water…

Strawberry Mango Baked Oatmeal

Prep Time: 10 minutes

Cook Time: 25 minutes

Yield: serves 1

What you'll need:

  • 1/3 cup milk of choice
  • 1/3 of a mango, diced
  • 1/2 cup rolled oats (I use Country Choice Organic)
  • 1/4 tsp baking powder
  • pinch of salt
  • 1/3 cup fresh strawberries, hulled

How to make it:

  1. Preheat oven to 350 degrees F. Spray a single-serving ramekin with nonstick spray.
  2. In a medium mixing bowl, add milk and diced mango. Stir.
  3. Add oats, baking powder, and salt. Mix until combined.
  4. Dice and carefully fold strawberries into the mixture.
  5. If you'd like to add any extra ingredients (coconut oil, dried fruit, nuts, sunflower seeds), do so now.
  6. Pour into baking pan and bake for 20-25 minutes.

For a big batch (serves ~4)

  • 1/8 tsp salt
  • 1 cup fresh strawberries, hulled

Instructions

  1. Preheat oven to 350 degrees F. Spray 8×8 baking pan with nonstick spray.
  2. In a large mixing bowl, add milk, water, and diced mango. Stir.
  3. Add oats, baking powder, and salt. Mix until combined.
  4. Carefully fold strawberries into the mixture.
  5. If you’d like to add any extra ingredients (coconut oil, dried fruit, nuts, sunflower seeds), do so now.
  6. Pour into baking pan and bake for 25 minutes.
