S’mores Oatmeal…and my blog’s 4th birthday!!

My blog is four happy years old. This occasion seemed like the perfect time to celebrate with s’mores.

I’ve been pestered to create this recipe for years. Literally YEARS.

You guys would be like:

And I would be like, vegan marshmallows are sooooo expensive. ?

When it came time for my anniversary post, this was the first thought that came to mind. What better way to celebrate than with s’mores?

Not wanting a full box of graham crackers and a full bag of vegan marshmallows, I cheated and bought a s’more treat by Sweet & Sara (which is, admittedly, probably only available in the NYC area), and then I deconstructed it into its individual parts. This technically made it more expensive per ounce, but considering it gave me only the quantity I wanted and nothing more, I thought this price was worth it.

Other options for the graham cracker would be products like Teddy Grahams, Annie’s Buddy Grahams, regular old graham crackers, Back to Nature Honey Graham Sticks, or a graham cracker-themed cereal like Golden Grahams or Cascadian Farm Graham Crunch Cereal. Vegans, if you avoid honey, try Nabisco Original Graham Crackers.

I decided to do a fudgy base (made from zucchini and dates) instead of topping with chocolate chips because I figured it was already going to be indulgent enough with the marshmallows and graham cracker. Using a cocoa powder mix-in gives the satisfaction of chocolate, but in a less sugary way. My IBS you would not appreciate all that sweet in one hit. However, if you want to go all out, top with some chocolate chips! (Or Dark Chocolate Dreams. Or Faux-reo PB2.)

Random Recommendations:

S’mores Oatmeal

Prep Time: 5 minutes

Cook Time: 10 minutes

Yield: serves 1

What you'll need:

  • 1 cup milk of choice
  • 2-3 chopped dates
  • 1/3 - 1/2 cup grated yellow squash or (peeled) zucchini
  • 1/2 cup rolled oats
  • 1/2 tsp vanilla extract
  • 1 slightly rounded tbsp cocoa powder
  • pinch of salt
  • marshmallows for topping
  • 1 tbsp (or more) crushed graham cracker

How to make it:

  1. Bring milk (I used 1/2 cup almond milk and 1/2 cup water) to a boil, add dates, squash, and oats, and reduce heat to medium. (If you’d like to add a teaspoon of flax or chia seeds, do so now.)
  2. Stir occasionally. Once more of the liquid has absorbed, add vanilla extract, cocoa powder, and salt. Stir. Taste and add maple syrup if necessary.
  3. When you’re pleased with the consistency of the oatmeal, transfer to a bowl.
  4. You can add marshmallows as they are, or you can roast them. I (very carefully) stuck mine on the end of a stainless steel knife and held them over the flame of my gas-top stove. That's probably dangerous, but whatever.
  5. Finish by sprinkling graham crackers on top and adding a splash of milk.
