Sesame-Date Oatmeal Bites

These little snacks are perfect for tahini lovers! The no-bake beauties pack a big smack of tahini flavor, only slightly tempered by the sweetness of the dates and maple syrup. Shout out to all my fellow bitter-loving tahini readers!!

What you’ll need:

  • 3/4 cup oats (old-fashioned or quick – I used BetterOats quick oats)
  • 1 tablespoon chia seeds
  • 2 tablespoon cashew pieces (raw recommended)
  • 4 pitted dates, diced into smaller pieces
  • 3 tablespoons water*
  • 2 tablespoons maple syrup
  • 1/4 cup tahini paste*
  • sesame seeds, for coating

How to make it:

  1. Add ingredients except tahini to a food processor and process in short bursts several times.
  2. Add half the tahini and repeat. (I had better luck when I didn’t add the tahini all at once, but this may differ based on your specific food processor.)
  3. Add the rest of the tahini and repeat, processing in short bursts until mixture is combined and begins forming a sticky ball of “dough.”
  4. Roll the balls so they are somewhere between 1-2 inches in diameter. Finish by rolling each ball in sesame seeds.
  5. Store in the fridge. According to the recipe I adapted this from, it should be good for 5-7 days.

Just an FYI:

*Tahini can often be very thin (almost watery) at the top of the jar and extremely thick at the bottom. Try and stir your jar as MUCH as possible and get a thicker consistency of paste for this recipe. If it’s still runny, try reducing the amount of water in the recipe.

To double this recipe, double each ingredient except the water and maple syrup. Then, use about 4 tbsp water and 4 tbsp maple syrup.

Please carefully read the recipe notes regarding the consistency of your tahini. More than any other nut butter, tahini can take on drastically different consistencies from the top of the jar to the bottom–even after stirring! As such, you may need to alter the recipe slightly depending on how thick your tahini is that day.
