Rosemary Chocolate Chip Oatmeal

Last week, I gave you my Rosemary Chocolate Chip Baked Oatmeal, inspired by one of my new favorite cookies. This should show you just how much I love it (or, perhaps, how quickly I finish a bag of chocolate chips and how quickly rosemary turns into sad, dried-up needles).

Maybe a bit of both. 🙂

I guess this is kind of like the “cookie dough” version of the baked recipe. However, I didn’t use “cookie” in the title for either because 1) I hate long titles, and 2) not that many people hear “rosemary chocolate chip” and immediately think, “COOKIES!!!” Maybe someday.

I’m pleased that so many of you have already tried the baked version. I assure you, it is worth it! The best part is, if you buy all the ingredients to make the baked version, you have no reason not to try this version! You have to use up that zucchini and rosemary somehow. (I’m sure you will have no trouble finishing the chocolate chips, if you’re anything like me!)

Rosemary Chocolate Chip Oatmeal

Prep Time: 5 minutes

Cook Time: 5 minutes

Yield: serves 1

What you'll need:

  • 3/4 cup milk of choice
  • 1/2 cup's worth of peeled and diced zucchini
  • 1/4 cup quick-cook steel cut oats
  • 1/2 tsp vanilla extract
  • 1/8 tsp molasses
  • 3 tsp maple syrup (or more)
  • pinch of salt
  • 1 tsp minced fresh rosemary
  • handful of semi-sweet chocolate chips or chopped chocolate
  • another pinch of coarse salt, for topping (optional, I omitted)

How to make it:

  1. Bring milk (I used 1/2 cup almond milk and 1/4 cup water) to a boil, add oats, and reduce heat to medium. (If you’d like to add a teaspoon of flax or chia seeds, do so now.)
  2. Add grated zucchini/squash (alternatively, you can puree it instead of grate it). Stir occasionally.
  3. Once more of the liquid has absorbed, add vanilla extract, molasses, maple syrup, and salt. Stir. Add more maple syrup if necessary.
  4. When you’re pleased with the consistency of the oatmeal, stir in fresh rosemary and transfer to a bowl.
  5. Top with another splash of milk, chocolate chips, and any other additional ingredients (coconut, nuts, dried fruit, etc.). If you want this to be salted, sprinkle the optional coarse salt on top.
