PB2 Yogurt Frosting

Have you ever wanted to top your oatmeal with a pillow of creamy frosting? But you don’t want to give up your beloved peanut butter?

Here’s a great compromise. This topping is easy to make, requiring just plain yogurt and PB2 (and a drop of vanilla extract, if you’d like).

What you’ll need:

  • 1/4 cup plain or vanilla yogurt (I used Forager, cashew-based, unflavored, unsweetened)
  • 1-2 tbsp PB2
  • 1/8 tsp vanilla extract (optional)

How to make it:

  1. Mix all ingredients together until all lumps are gone. Add additional PB2 if you want a thicker mixture.
  2. Add as a topping to your favorite overnight oatmeal, use as a layer in an oatmeal parfait, or eat as is with a spoon!

I envision this best as a topping for overnight oatmeal. You could try it on warm porridge, but I’m not sure how the yogurt would stand up to the heat and steam!

I used a new brand of nondairy yogurt called Forager, which is cashew-based. It was quite nice, almost as good as Anita’s Creamline. Also, I bought the whole 24 oz tub from Whole Foods for only $4.99. That’s insane! To put that in perspective, the tub of Anita’s was $10.99. The texture of Forager was a bit loose (I prefer a thicker, Greek-style yogurt), but the flavor was quite pleasant. I will buy again.

As for adding the PB2, I gave a range because you might want to add more or less depending on how thick your yogurt is. For example, since I had a runnier yogurt, I added extra PB2 to thicken it up. And FYI, you can definitely eat this plain, like yogurt. It’s superb. 🙂
