My last coconut round-up was in 2013, and considering coconut has become one of my favorite flavors and toppings, this is a travesty! I am here to remedy that need with a brand new round-up, featuring coconut-based recipes from the past two years, as well as some of the classics that appeared in the original post.

I’ll admit that figs aren’t high on my list of favorite fruits, but if I were going to eat them, it would be in this recipe. Coconut and figs are best friends (I’m pretty sure).

This one also made the original post, and is one that many readers continuously enjoy. I made it on a whim, so I’m always pleasantly surprised to receive positive reviews on it. It’s so comforting!
