As crazy as my life has gotten, it’s very important to me to maintain some sort of regularity on this blog. I loathe how “one recipe a week” has become so commonplace. I find this unacceptable, and I want to do better.

Thankfully, April is coming up. April is this beautiful month in the education world where you have a week off for Spring Break, you receive the blessing of multiple days of state testing (aka NO LESSON PLANNING), and for the most part, the students have your procedures and routines down to an art form. Last year, I began my fitness regime in April simply because I suddenly had the time (and energy!) to make it work.

I almost didn’t make this recipe over the weekend, thinking that my time would be best allocated to something else (there’s always grad school assignments to work on…). But I did it because this blog is one of the most important parts of my life. It’s my child. Would you ignore a child to work on grad school? No, you wouldn’t. 🙂

This is a unique combination because it uses roasted grapes instead of just plain ones. If you’ve never roasted something before, then you are certainly missing out. You know that everything is better roasted, right? Right.

That being said…if you’re feeling extra lazy (or pressed for time), just use regular fresh grapes. Nobody will complain. Certainly not me. 🙂

Mango and Roasted Grape Oatmeal

Prep Time: 5 minutes

Cook Time: 20 minutes

Yield: serves 1

What you'll need:

    For the grapes
  • 1/2 cup worth of red seedless grapes
  • drizzle of maple syrup
  • pinch of salt
  • For the oatmeal
  • 1 cup milk of choice (water not recommended)
  • 1/2 cup rolled oats (I use Country Choice Organic)
  • 3/4 cup diced mango (puree if desired)
  • pinch of salt

How to make it:

  1. Preheat oven to 400. Spray a small ramekin with cooking spray.
  2. Add ingredients for roasted grapes and toss a few times.
  3. Roast in oven for ~20 minutes.
  4. (Feel free to make oatmeal while grapes are roasting OR wait until they are finished.) Bring milk (I use an equal mixture of almond milk and water) to a boil, add oats, and reduce heat to medium.
  5. Add diced mango and a pinch of salt and stir occasionally.
  6. When you’re pleased with the consistency of the oatmeal, transfer to a bowl. Top with roasted grapes and enjoy! Walnuts also recommended.
