TOTALLY not oatmeal-related.
I’ve recently gotten really into la comida mexicana (Mexican food). It’s likely because my favorite vendor at the monthly vegan pop-up market is Vegicano, who supplies my new addiction with TACOS. Also, Mexican is my boyfriend’s favorite food, so we eat it a lot when we’re together.
But I rarely cook it myself! This needs to change. I can’t cure my taco cravings once a month. I want to be able to do it at home! I want to be a master at making great pinto beans and fun twists on salsa. I’m already a rockstar at guac and classic pico, but I want to build on that.
#marzomexicano (Mexican March) is going to be a food challenge for myself (that you are welcome to join me in, or simply just to observe) in which I will be making a variety of Mexican or Mexican-inspired recipes throughout the month of March and posting the results on Instagram. There will be tacos, salsas, salads, soups, enchiladas, and even one Mexican-inspired pasta. 😉

Some will be traditional and some will be anything but (like that pasta). Some of it my boyfriend would approve of, and some of them he definitely will not (again, the pasta). The authenticity is pretty subjective; I’m simply aiming for the spirit of Mexican cooking and trying to capture the classic flavors. While I am trying to avoid doing anything “too American,” it’s pretty hard to do since a vegan diet already introduces an inauthentic approach.
…Honestly, it will mostly be tacos.
Here is the challenge I have laid out for myself:
- each week must include 3 unique* recipes (either an entree or side)
- each week must also include at least 1 unique homemade salsa (not included as part of the 3 unique recipes of the week)
- the entire month must contain 2 unique dessert recipes (not included as part of the 3 unique recipes of the week)
*By “unique,” I mean you cannot repeat the same recipe (e.g. don’t make the same salsa twice).
The best part of this challenge is that by sticking within one cuisine, it will be really easy to reuse and repurpose leftovers. That salsa is going to be a great condiment to enjoy all week, and the red rice can be enjoyed alongside a variety of entrees!
