How to Use PB2 + Applesauce PB2 Overnight Oatmeal

I recently asked you all how you like to use PB2 in your oatmeal. Not surprisingly, many of you have similar ideas as mine! I’ll share some of your ideas, and I’ll end with a new recipe using PB2 at the end.

Mix it in! The most obvious option is to mix it right into your oatmeal. Note that you will need to use at least a tablespoon to be able to taste it.

Jasmine says, “I put it in oatmeal with chocolate protein powder. Add some nuts or freeze dried banana too!”

Angie commented, “Love it in the peanut butter cookie oatmeal!”

And finally, Kathy says, ” 2 TB PB2 in my overnight oats (either reg. or chocolate) along with some mini chocolate chips and chopped pecans!”

Use it as a topping! This is what I do more often. As you know, I love a glob of peanut butter on top of my oatmeal, so I add water to transform the powder back to a nut butter consistency.

However, you can have fun with this. Like Nora, I mix mine with a tiny bit (like 1/4 tsp) of coconut oil or coconut butter. It seems like a negligible amount, but it makes such a difference. It adds incredible flavor and a wonderful richness.

Marina likes to “mix it with some Greek yogurt for a yummy protein-packed dip/frosting” but you could use it to top your oatmeal, and you could also do this with non-dairy yogurt. Similarily, Nikki mixes it with Cool Whip. Coconut whipped cream with PB2, anyone? I’m in.

You could also mix it with mashed banana, cocoa powder, pumpkin puree, chocolate almond milk, etc. Despite what the instructions on the jar say, you are NOT limited to just water! 🙂

Apples

Use it as a glaze! Instead of preparing it as a nut butter or mousse, you can add extra liquid (be careful–it doesn’t take much!) to replace syrup or glaze. That’s what I did when I made some french toast last weekend…

Again, the sky is the limit here. You could just mix it with water…or you could mix in maple syrup, cocoa powder, coffee granules, etc. In other words, the possibilities are endless!

But it’s not only for pancakes, waffles, and french toast! Marina says, “It’s also great as a “drizzle” for baked oatmeal if you add just a tiny bit more water to make it thinner.”

Oatmeal snackage… I just had to share Max’s idea, too: “Not really in an oatmeal, but I sometimes combine a tablespoon of PB2, a tablespoon of cream cheese, and a tablespoon of rolled oats and mix it into kind of an edible cookie dough. Tastes amazing!” Wow. I may just have to try this with the Tofutti I impulse-purchased last week…

Now, on to that recipe I promised you…

Applesauce PB2 Overnight Oatmeal

Prep Time: 5 minutes

Yield: serves 1

What you'll need:

  • 1/2 cup rolled oats
  • 1/2 cup milk of choice
  • 1/2 cup applesauce
  • 1-2 tbsp pb2
  • Pinch of salt

How to make it:

  1. Combine all ingredients in a sealable container (like a mason jar).
  2. Stir the mixture, OR seal it tightly and shake vigorously until everything is thoroughly combined.
  3. Place in the fridge overnight (or several hours). In the morning, eat cold or warm up for 1-2 minutes in the microwave.

Just an FYI:

I make homemade applesauce. It's 10x better! Coconut milk is a nice touch with this recipe.
