Grilled Pineapple & Dark Chocolate Oatmeal

I have been wanting to grill more fruit ever since I made my Grilled Peach Steel-Cut Oatmeal a couple summers ago. Since I spent several days with my parents in Minnesota, I took full advantage of their grill and made this recipe.

One of my biggest flaws is impatience. These pineapples should have deeper, darker, more beautiful grill marks, but I was like “OH COOL THEY HAVE SOME LINES ON THEM SO THEY ARE OBVIOUSLY DONE.” Either way, the result was delicious. If you are more patient than I am, you can probably make this even better, if that’s possible.

I used Trader Joe’s 72% dark chocolate, the kind that comes in the little circle tin with cute little chocolate wedges inside. The 72% is vegan! Yay! Two wedges were the perfect amount to top this oatmeal.

The oatmeal itself is fairly simple because the main show is what’s on top. It’s kind of like pasta: you don’t need your spaghetti to have a distinct flavor because that’s what the sauce is for.

. . . Good analogy? I dunno. Definitely debatable.

It’s been a while since I posted my Open Letter to my Readers with EDs, but your responses have been heartwarming. Thank you whole-heartedly to everyone who shared the post on Twitter, Facebook, etc. and commented with your thoughts or personal connections. It’s comforting to receive support after posting a provocative post like that.

Grilled Pineapple & Dark Chocolate Oatmeal

Prep Time: 5 minutes

Cook Time: 20 minutes

Yield: serves 1

What you'll need:

  • 1 or 2 fresh pineapple rings (I used one and a half)
  • 3/4 cup milk of choice (I used unsweetened coconut)
  • 1/4 cup quick cook steel cut oats (I use Country Choice Organic)
  • 1/4 tsp vanilla extract (optional)
  • pinch of salt
  • 2-3 tbsp chopped dark chocolate (or chocolate chips)

How to make it:

  1. Grill your pineapple. See here for instructions. I did not add any sweeteners or flavors; I just grilled the pineapple straight. Be patient. This step will take around 10-15 minutes (unless you have grilling secrets that I don't know about).
  2. Add liquid (I used 1/2 cup coconut milk and 1/4 cup water) to a medium saucepan and bring to a low boil. Add oats and reduce heat to a simmer.
  3. Cut up about half of your grilled pineapple and add to oats (I added 1/2 a ring). Add vanilla extract (if using) and salt. Stir.
  4. When your oatmeal reaches your preferred consistency, transfer to a bowl. Top with remaining grilled pineapple (you can leave them in ring form or cut them into smaller pieces) and chopped dark chocolate. Add another splash of milk and any other additional toppings (nuts, pomegranate seeds, other fruit, coconut, etc.).

Just an FYI:

You could skip the grilling step and just enjoy fresh pineapple and dark chocolate. It would be just as fabulous!
