Chestnut puree strikes again! You didn’t think I would make you make (or buy) an entire jar of chestnut puree and then not give you any more recipes to use it up, did you?

Meet the newest member of the fudge family: this Fudgy Chestnut Oatmeal is most similar to Sweet Potato Fudge Oatmeal; it has a similar earthiness and thick creaminess. It also requires a generous dose of maple syrup.* Whatever you do, don’t skip the sweetness–and this is coming from someone who doesn’t have a sweet tooth.

*You could also try using chopped dates to sweeten it instead. I haven’t tried this myself because I find dates to be a tad too expensive for my grad school budget. Le sigh.

Like all of my fudgy recipes, this would be great topped with nut butter, a la Fudgy Banana and Peanut Butter Oatmeal. However, in the pictures I topped it with another heap of chestnut puree. Honestly, I was just trying to use up more of that chestnut puree; I want to use it before it goes bad. 🙂 If you’re a chestnut fiend (and it seems as though many of you are), you might enjoy this. Otherwise, NUT BUTTER is the way to go. 🙂

Random Recommendations:

Fudgy Chestnut Oatmeal

Prep Time: 2 minutes

Cook Time: 5 minutes

Yield: serves 1

What you'll need:

  • 1 cup milk of choice, or water
  • 1/2 cup old-fashioned oats
  • 1/3 cup (or more) grated zucchini or yellow squash (optional, but recommended)
  • 2 rounded tbsp chestnut puree (I made my own; it's way cheaper!)
  • 1/2 tsp vanilla extract (or hazelnut)
  • 1 rounded tbsp cocoa powder
  • 1 tbsp maple syrup (or another sweetener; adjust to taste)
  • pinch of salt

How to make it:

  1. Bring milk (I used 1/2 cup almond milk and 1/2 cup water) to a boil, add oats, and reduce heat to medium. (If you’d like to add a teaspoon of flax or chia seeds, do so now.)
  2. Add grated zucchini/squash (I grate mine while the liquid is heating up). Stir occasionally.
  3. Once more of the liquid has absorbed, add chestnut puree, vanilla extract, cocoa powder, maple syrup, and salt. Stir until puree is evenly distributed.
  4. When you’re pleased with the consistency of the oatmeal, transfer to a bowl. Top with another splash of milk and any other toppings of your choice. I added another heap of chestnut puree and berries. It's also great with nut butter, like Fudgy Peanut Butter & Banana Oatmeal
