Fudgy Beet Oatmeal with Pomegranate

Beets and oatmeal? Beets and chocolate? Fudgy beets? Yes. Yes, I did.

This isn’t the first time I’ve done this. I also combined beets and chocolate to make my Black Forest Oatcakes two years ago. Listen: it works. Trust me.

The other time I put beets in oatmeal, I just diced it because I was feeling lazy. This was a mistake. Diced beets have no place in oatmeal. Every mistake I’ve made on this blog can be blamed on laziness. ? My bad.

This time, I pureed it. I took out my food processor, pureed the beets, and then washed said processor. Like a f***ing adult.

You could also grate it, but for the fudgiest experience, pureeing it is the best option. There is just something strange about having chunks of beets in your oatmeal. Unless you really, really, really like beets.

So what does this taste like, you ask? Chocolate is the prevailing taste, but the subtle beet taste adds a natural hint of sweetness, kind of like a berry would, but a little more earthy, akin to my Sweet Potato Fudge Oatmeal. (Let’s be honest, we all know beets taste like glorified dirt.) By topping this oatmeal with pomegranate, it brings out the berry-like sweetness and balances out that earthiness. Perfect combo, as long as you like beets.

Don’t like beets? You should probably just make Sweet Potato Fudge Oatmeal and call it a day. 😉

Fudgy Beet Oatmeal with Pomegranate

Prep Time: 5 minutes

Cook Time: 5 minutes

Yield: serves 1

What you'll need:

  • 3/4 cup milk of choice, or water
  • 1/4 cup quick cook steel-cut oats (I use Country Choice Organic)
  • 1/3 cup diced cooked beets (does not need to be exact)
  • 2 tbsp unsweetened cocoa powder (or at least 1 and a half)
  • 1/4 tsp vanilla extract
  • 2-4 tsp maple syrup (adjust to your preferences)
  • pinch of salt
  • pomegranate arils for topping

How to make it:

  1. Puree beets with milk. It doesn't need to be perfectly smooth, but make sure there are no big chunks left.
  2. Add to saucepan and bring to a boil. Add oats, and reduce heat to medium. (If you'd like to add a teaspoon of flax or chia seeds, do so now.)
  3. After a couple of minutes, stir in cocoa powder, vanilla extract, maple syrup, and salt.
  4. When you're pleased with the consistency of the oatmeal, transfer to a bowl. Add a splash of your milk of choice, pomegranate arils, and any other additional toppings (shredded coconut, nut butter, nuts, etc.).
