Fig and Dark Chocolate Bites

I had so many elaborate porridge plans for last week. I even bought all the ingredients for them and planned exactly which day I would make them. Then my stove stopped working, so I made these adorable, fudgy, easy, snackalicious truffles instead.

What is it about my life that consistently leaves me without a functioning stove? Why does New York City keep doing this to me? First, my apartment in Bed-Stuy had just finished its renovation and the gas company took weeks to come in and grant us the comfort we deserved. I literally made this Pineapple Jalapeño Oatmeal on a grill in our backyard.

Then I moved to Chinatown, and the renters before us had turned off their gas years ago, so apparently they only cooked with their microwave. Because the gas had been off for so long, they had to go through weeks of inspection to turn it on again, and it dragged out to a MONTH AND A HALF before our landlords just said “eff it” and replaced our gas stove with an electric one. I put out so many muesli recipes that month!

Here I am again, gas-less. This time, it just suddenly happened despite the fact that I’ve been in this apartment for ten months. And you know what happens when you call the gas company in NYC and tell them you have no stove or hot water? They say their earliest appointment is a week away. A. WEEK. AWAY.

But I wanted to give you guys new recipes, so I turned my attention to raw ideas. When this first comes out of the food processor, it tastes somewhat bland, BUT after you set it in the fridge for a couple hours, the flavors come together. You taste the figs and chocolate, and the sweetness is just right. I promise–if you give it the time–it will be delightful. Don’t judge it from the first bite right out of the food processor!

I topped mine with a bit of coarse salt, hoping this would be similar to my Salted Fudge PB2. I’m not sure if I recommend the salt. I think it’s better without it!

Fig and Dark Chocolate Bites

Prep Time: 10 minutes

Yield: makes about 10 1.5" balls

What you'll need:

  • 3/4 cup oats (old-fashioned or quick - I used BetterOats quick oats)
  • 1 tablespoon chia seeds
  • 1 tablespoon slivered almonds
  • 4 dried figs, diced into smaller pieces
  • 3 tablespoons water
  • 2-3 tablespoons maple syrup
  • 1/4 cup Dark Chocolate Dreams peanut butter by PB&Co (or another chocolate nut butter)

How to make it:

  1. Add ingredients except peanut butter to a food processor and process in short bursts several times.
  2. Add half the peanut butter and repeat. (I had better luck when I didn’t add the peanut butter all at once, but this may differ based on your specific food processor.)
  3. Add the rest of the peanut butter and repeat, processing in short bursts until mixture is combined and begins forming a sticky ball of "dough."
  4. Roll the balls so they are somewhere between 1-2 inches in diameter. If desired, you could roll these in something like coconut, sesame sides, crushed nuts, etc. I rolled mine in coarse salt because that's the kind of person I am.
  5. Store in the fridge. According to the recipe I adapted this from, it should be good for 5-7 days.

This recipe will taste a little bland when it first comes out of the food processor. It will taste sweeter and more "figgy" after it sits in the fridge for a couple hours!

I halved this recipe because I felt like my Apricot Almond Butter Bites made way more than I wanted or could reasonably finish in a week. To double this version, double each ingredient except the water and maple syrup. Then, use about 4 tbsp water and 4 tbsp maple syrup.
