Cookie Dough Overnight Oatmeal

Another lazy blog week. And I promised myself I’d be better in December! The sad thing is, I actually had recipes I could have posted. In my defense, they were terrible pictures that I wasn’t desperate enough to publish. Seriously. You try taking good photographs at 5:30 am.

This is one of those refrigerator recipes that will actually be perfectly satisfying cold. I rarely eat my oatmeal cold, but this one is an exception. (To be honest, though, I still heated this one up a little bit!)

This will obviously not be as sweet as your standard cookie dough recipe. You could always sweeten it with honey or maple syrup. I only used two dates, and I found that to be sufficient.

Cookie Dough Overnight Oatmeal

Prep Time: 3 minutes

Cook Time: 5 minutes

Yield: serves 1

What you'll need:

  • 1/2 cup rolled oats (I use Country Choice Organic)
  • 1/2 cup milk of choice
  • 2 pitted dates, chopped finely
  • 1 tsp chia seeds
  • 1/4 tsp vanilla extract
  • 1/8 tsp molasses
  • 1/8 tsp cinnamon (optional)
  • handful of chocolate chips
  • pinch of salt

How to make it:

  1. Combine all ingredients in a mason jar.
  2. Cover with lid and shake, shake, shake until combined.
  3. Store in the refrigerator overnight (or for several hours). Eat cold or warm up in the microwave!

Just an FYI:

Variation: For an Oatmeal Raisin Cookie, swap the chocolate chips for raisins, and increase the amount of cinnamon to 1/4 tsp.
