Chocolate-Covered Strawberry Oatmeal (with Chocolate PB2 Sauce)

I always liked the idea of an oatmeal dedicated to chocolate-covered strawberries, but I figured I basically already had one with my Chocolate Strawberry Oatmeal. However, I’ve recently been making a thin chocolate PB2 concoction and using it as a sauce over my banana soft serve, and that gave me inspiration for this recipe.

I don’t cook strawberries in the oatmeal often, as I love the juicy freshness they provide as a topping (uncooked). But every now and then, a recipe idea comes along in which cooked-down berries are the most fitting. Not every recipe can be fudge-based, and pink porridge is delightful. ?

I didn’t include a recipe for actual chocolate-covered strawberries in the recipe, but FYI, you melt down chocolate, dip in a fresh strawberry, and set on wax paper to cool and harden. Melting chocolate is kind of a betch, so I suggest reading some tips if you’ve never done it before. I used white chocolate because it’s what I had on hand, but semisweet chocolate chips are ideal.

Chocolate-Covered Strawberry Oatmeal (with Chocolate PB2 Sauce)

Prep Time: 5 minutes

Cook Time: 5 minutes

Yield: serves 1

What you'll need:

    For oatmeal:
  • 3/4 cup milk of choice, or water
  • 1/4 cup quick cook steel-cut oats
  • 6 (or more) strawberries, hulled and quartered
  • 1/4 tsp vanilla extract
  • pinch of salt
  • For Chocolate PB2 Sauce:
  • 1 tbsp PB2 or powdered peanut butter
  • 1/2 tsp cocoa powder
  • 1 and 1/2 tbsp water
  • 1/2 tsp maple syrup (optional)

How to make it:

  1. Bring milk to a boil, add oats and strawberries, and reduce heat to medium. (If you'd like to add a teaspoon of flax or chia seeds, do so now.)
  2. While oats are cooking, make Chocolate PB2 Sauce by mixing together all four ingredients thoroughly. If it's too thick, add more water. If it's too thin, add more PB2.
  3. Once more of the liquid has absorbed, add vanilla extract and salt to the oatmeal. Stir.
  4. When you're pleased with the consistency of the oatmeal, transfer to a bowl. Drizzle Chocolate PB2 Sauce over the oats and add any other additional toppings (shredded coconut, nuts, etc.).
