Chestnut Maple Latte Oatmeal

Like my Chestnut Maple Oatmeal, this originally took inspiration from chestnut praline. In fact, I had heard of Chestnut Praline Lattes from Starbucks, and, despite the fact that I have no idea what that is or what it tastes like, I thought I should replicate it. I have been known to do that. ?

But then I saw it’s already been done, and I decided not to go through the trouble. What is praline, anyway? I don’t have time for that nonsense. We all know maple syrup is tastier anyway.

If you’re observant at all, you’ll notice this recipe is identical to my Chestnut Maple Oatmeal, with a modest addition of coffee granules. Boom. Easy adaptation.

Anyway, I still have half a jar of chestnut puree, and it appears to still be good. I didn’t expect it to last this long, truthfully. The question is, how will I finish it? Any other ideas for oatmeals I could make with chestnut puree??

If you want to know which recipe you should try first, I recommend this one. It’s more flavorful than the plain Chestnut Maple, for sure.

One more thing: If you want to make this a cheater version of Chestnut Praline, just use a caramel sauce instead of the maple syrup. Boom. Another easy adaptation. ?

Prep Time: 2 minutes

Cook Time: 5 minutes

Yield: serves 1

What you'll need:

  • 1 cup milk of choice, or water
  • 1/2 cup old-fashioned oats
  • 1/3 cup (or more) grated zucchini or yellow squash (optional, but recommended)
  • 2 rounded tbsp chestnut puree (I made my own; it's way cheaper!)
  • 1/2 tsp vanilla extract (or hazelnut)
  • 1/2 tsp instant coffee granules
  • 1 tbsp maple syrup (or another sweetener)
  • pinch of salt
  • pecans for topping

How to make it:

  1. Bring milk (I used 1/2 cup almond milk and 1/2 cup water) to a boil, add oats, and reduce heat to medium. (If you’d like to add a teaspoon of flax or chia seeds, do so now.)
  2. Add grated zucchini/squash (I grate mine while the liquid is heating up). Stir occasionally.
  3. Once more of the liquid has absorbed, add chestnut puree, vanilla extract, coffee granules, maple or other sweetener, and salt. Stir until puree is evenly distributed.
  4. When you’re pleased with the consistency of the oatmeal, transfer to a bowl. Top with another splash of milk, a sprinkle of chopped pecans, and another drizzle of maple or other sweetener.
