Cherry Pineapple Oatmeal

I learned after making Carrot Pineapple Oatmeal that adding pineapple to anything is a game-changer. It’s a way to add great flavor and sweetness to something that wouldn’t be sweet or flavorful otherwise. ? Cherries on their own have great flavor, but not so much in oatmeal.

I’ve been trying to return to simpler porridges lately. Brownie Baked Oatmeal with Matcha Cashew Filling is great, and Yellow Cake Baked Oatmeal with Chocolate PB2 Frosting is grand, but there’s a reason why I just make Fudgy Banana & Peanut Butter Oatmeal every day instead of those elaborate concoctions.

(It’s probably the same reason I have avocado toast for lunch 5 times a week. ?)

The best part about simple porridges is that you can go crazy on toppings. Sometimes when I make complex recipes, I get disappointed that I can’t throw a thousand different nuts or fruits or nut butters on top without ruining it. The toppings are the best part sometimes.

Cherry Pineapple Oatmeal

The other great part about this recipe is that you can make it with frozen fruits. I have built up quite a stock of frozen fruits lately: cherries, pineapple, mango, wild blueberries. They all work great in oatmeal. (Just avoid frozen strawberries at all costs. Unless you like frozen red ice cubes, because that’s what they end up tasting like.)

Cherry Pineapple Oatmeal

Prep Time: 2 minutes

Cook Time: 5 minutes

Yield: serves 1

What you'll need:

  • 3/4 cup milk of choice (try coconut!), or water*
  • 1/4 cup quick-cook steel cut oats*
  • 1/4 cup (or more) fresh or frozen cherries, halved or quartered
  • 1/2 cup fresh or frozen diced pineapple
  • 1/4 tsp vanilla extract
  • pinch of salt

How to make it:

  1. Add liquid to a saucepan over medium heat. Bring it to a low boil and add oats. Reduce heat to medium low (it should be at a simmer).
  2. Add cherries and pineapples, and stir..
  3. When more liquid has absorbed in the oatmeal, add vanilla extract and salt.
  4. When you're pleased with the consistency of the oatmeal, transfer to a bowl. Add a splash of milk and any other desired toppings (fresh or dried fruit, coconut, nut butters, etc). I topped with toasted coconut and chocolate PB2.

Just an FYI:

*You can make this with rolled or quick oats by increasing the liquid to 1 cup and the oats to 1/2 cup.
