Cheater Funfetti Baked Oatmeal [Product Review: You Fresh Naturals]

Funfetti baked oatmeal with four ingredients + salt?? Yeah, you read that correctly. Four ingredients. Do you know how rare it is to have a baked oatmeal meet the sole criterion for the “5 ingredients or less” tag? Very. Very rare.

This rarity is made possible through the use of a nut butter. I made this recipe with You Fresh Naturals “Birthday Cake” Cashew-Coconut Butter. Because the nut butter is already sweetened and flavored to the max, it lends itself quite easily to a “5 ingredients or less” recipe. It pretty much does all the work.

The brand is particularly known for its high-protein spreads, dubbed “muscle butter.” As expected, this means it uses whey protein for many of the products, but this particular nut butter–the birthday cake cashew coconut–is whey-free. Yay!

I found a simple baked oatmeal like this to be the best use of this nut butter. Being so flavorful and sweet, it has a life of its own that can overshadow a banana or apple slice, but in the oatmeal it is allowed to shine while the sweetness is tempered by the earthy oats.

You’ll notice that the sprinkles have a pale color. That’s because they are naturally colored using things like beet juice. Yay for no Red #40!

Cheater Funfetti Baked Oatmeal

Prep Time: 5 minutes

Cook Time: 25 minutes

Yield: serves 1

What you'll need:

  • 1/2 cup regular rolled oats
  • 1/3 cup milk of choice
  • 2 tbsp funfetti/birthday cake-style nut butter (I used You Fresh Naturals)
  • 1/4 tsp baking powder
  • pinch of salt

How to make it:

  1. Preheat oven to 350 degrees F. Spray a single-serving ramekin with nonstick cooking spray.
  2. In a food processor or blender, pulse oats a few times until they are more like a coarse flour.
  3. In a medium-sized bowl, mix (and mash) milk and nut butter together until combined. (Do not do this in a blender or you may lose the sprinkles that give this its "funfetti" appeal.)
  4. Add ground oats, baking powder, and salt to the bowl of wet ingredients, and stir until combined.
  5. Pour into the prepared ramekin. Bake for 18-22 minutes.

Just an FYI:

To give this a nutritional boost, you can add grated or pureed zucchini or yellow squash. I did not try this with this particular recipe. Generally, about 1/4 or 1/3 cup zucchini is sufficient, and you will likely need to reduce the amount of milk in the recipe due to the moisture from the squash. Add the milk last and only add 1-2 tbsp at a time until you find the right consistency.
