Blueberry PB2 Overnight Oatmeal

When it comes to peanut butter and PB2, there are two camps: those of us who like to stir it into our oatmeal, and those of us who like to keep it in a glob at the top of our oatmeal. I happen to belong to the latter group.

However, I know not everyone does. I have often told myself that I need to include recipes for the Stirrers, but I always resisted. Today is the big day that I put others’ needs before my own. πŸ˜€

Blueberry PB2 Overnight Oatmeal

Using PB2Β is an easy way to add peanut butter flavor to your entire porridge. And since it’s less decadent that actual peanut butter, you could always add a glob of PB2 at the top, too. Which is exactly what I did. ^_^ #notsorry

Blueberry PB2 Overnight Oatmeal by The Oatmeal Artist

Do you prefer your peanut butter stirred in, or left in a glob?

Blueberry PB2 Overnight Oatmeal

Prep Time: 5 minutes

Yield: serves 1

What you'll need:

  • 1/2 cup rolled oats (I use Country Choice Organic)
  • 1/2 cup milk of choice
  • 1/2 tsp vanilla extract
  • dash of cinnamon
  • 2 tbsp pb2
  • Pinch of salt
  • handful of fresh blueberries

How to make it:

  1. Combine all ingredients except blueberries in a sealable container (like a mason jar).
  2. Stir the mixture, OR seal it tightly and shake vigorously until everything is thoroughly combined.
  3. Add in blueberries and stir (or shake) carefully. Blueberries are fragile beings. πŸ™‚
  4. Place in the fridge overnight (or several hours). In the morning, eat cold or warm up for 1-2 minutes in the microwave.

  1. I’d never heard of PB2 until I saw you write about it, but you’ve made me curious enough to want to order some online. What do you see as its advantage over peanut butter?

      Honestly, I was against it for a long time because I think regular peanut butter is totally healthy. I’m not against naturally-occuring fats (like pb and avocado), but the fat is definitely what made me binge on it like crazy. I hope to write a post soon to clarify this more, but PB2 has brought great relief to me and cured me of a damaging addiction.

    I’m a “stirrer” and love using PB2 in oatmeal. I prefer PB2 over regular peanut butter in overnight oats because it blends better with the other ingredients. Unfortunately, I have a strong dislike of blueberries. Do you think that strawberries or raspberries would work just as well in this recipe?
