Blood Orange & Toasted Coconut Oatmeal

If you cannot tell from my intermittent posting this month, my hours have been pretty tied up lately. I began my grad school classes two weeks ago, and the workload that accompanied them has stolen all my free time. Although the classes themselves recharge me during the week, the readings and assignments just burn me out more.

I’m like black toast. Charred broccoli. The crusty black layer of oatmeal that sticks to the bottom of the pan.

The easiest thing to give up would by my blog, considering it’s the one with the lowest stakes. I’m not paying thousands of dollars for it (unlike my grad school classes), and no children are relying on it for the quality of their future (unlike teaching). However, I refuse to do that because it also happens to be the thing that brings me the most joy.

Thus, I will continue to fight to make time for all of it. But if I miss a post every now and then, so be it. I am not invincible! And nobody likes burnt toast (although I’m secretly a fan of charred broccoli).

Blood Orange and Toasted Coconut Oatmeal

Because I couldn’t rally together my normal Friday post, I’m posting one today instead. It happens to be Valentine’s Day, which I technically pretend does not exist. If you want to pretend this is V-Day-themed because of the red blood oranges, go ahead. Otherwise, just appreciate that it’s oatmeal and it’s delicious. 🙂

Blood Orange & Toasted Coconut Oatmeal

Prep Time: 10 minutes

Cook Time: 5 minutes

Yield: serves 1

What you'll need:

  • 1 blood orange
  • 3/4 cup milk of choice (coconut suggested), or water
  • 1/2 cup regular rolled oats
  • 1/4 tsp lemon juice
  • zest from one half of blood orange
  • pinch of salt
  • shredded or shaved coconut for topping

How to make it:

  1. Prep your coconut by toasting in a small pan over medium low heat until it turns a golden hue. Remove from heat and set aside for later.
  2. Prep your blood orange.
  3. Bring milk (I use 1/2 c original coconut milk and 1/4 c water) to a boil, add oats, and reduce heat to medium. (If you’d like to add flax or chia seeds, do so now.)
  4. Immediately add half of the blood orange either by dropping in the segments and stirring, or juicing it. I juiced. (Save the rest for topping.)
  5. Once more of the liquid has absorbed, add lemon juice, orange zest, and salt. Stir.
  6. When you’re pleased with the consistency of the oatmeal, transfer to a bowl. Add a splash of your milk of choice, remaining orange segments, toasted coconut, and any other additional toppings (such as other fruit).
