Is it just me, or does nobody else appreciate pie like I do? Everybody is all about cake, and I’m just like, no, gimme dat pie.

Can any cake actually beat the perfection of a flaky pie crust? Is that sickeningly rich frosting actually better than a cinnamon-sugar crumb topping? Give me peach blueberry pie over red velvet ANY DAY.

For most people I know, if they do like pie, they prefer the cream ones. I find these inferior because they often use cookie-based crusts instead of a flaky, buttery one, but alas, my favorite pie during my childhood was banana cream, admittedly. Since going plant-based, I’ve yet to experience a good one. Sigh.

Luckily for me, there is oatmeal. Ever since making a banana cream pie overnight oatmeal, I’ve wanted to make its chocolate cousin. This is like a layered parfait, and as you can tell from the name, the chocolate layer goes on the bottom. I thought about making two different flavors of oatmeal, but eventually decided to make the bottom layer more of a chia pudding than an oatmeal. The result was super.

Black-Bottom Banana Cream Pie Overnight Oatmeal

Prep Time: 5 minutes

Yield: serves 1

What you'll need:

    For the chocolate layer
  • 4 oz. plain coconut yogurt (I use So Delicious greek-style)
  • 2 tsp cocoa powder
  • 1 tsp chia seeds
  • sweetener to taste (optional, I omitted)
  • For the banana layer
  • 1/2 a banana, mashed
  • 1/4 cup quick cook steel cut oats (I use Country Choice Organic)
  • 1/4 cup milk of choice
  • 1/2 tsp vanilla bean paste (or vanilla extract)
  • pinch of salt
  • For the topping
  • Rest of coconut yogurt
  • Rest of banana, sliced
  • Chocolate chips or shaved chocolate, optional

How to make it:

  1. Combine all ingredients for the chocolate layer and mix thoroughly. Layer at the bottom of mason jar or similar container.
  2. In another container, combine all ingredients for the banana layer and layer on top of the chocolate layer in the mason jar.
  3. Place in the fridge overnight (or several hours). In the morning, top with remaining yogurt and sliced banana and optional chocolate. You could warm it up for 1-2 minutes in the microwave, but I HIGHLY recommend eating this one cold.
