Biscuit Baked Oatmeal with Vegan Sausage Gravy

Have I talked about Happy Herbivore on here before? *searches* Yep, it looks like I have. I adore Happy Herbivore. I stopped buying cookbooks a couple years ago because I want to have a mobile lifestyle, and lugging around a library was not going to work out. Owning cookbooks when you can find a recipe for nearly everything you want online for free is also…just unnecessary, right?

However, I gladly own the first two Happy Herbivore cookbooks (and did not mind lugging them when I moved back in June). Lindsay’s recipes are so easy, quick, and functional. They are “everyday” meals…nothing that I need to motivate myself to make. I make something from one of her cookbooks at least once a week (typically the mac and cheese, haha).

Anyway, Happy Herbivore definitely makes me a happy herbivore…because it brings things like sausage gravy back into my life. Sadly, I never experienced biscuits and gravy until I was a freshman in college, just a few years before going vegetarian. That meant I only was “lucky” enough (we could debate how lucky/unlucky this was from a health perspective) to indulge in this beloved brunch favorite a couple times. (Oh, and then there’s the fact that I was getting it from my university’s cafeteria, so I’m sure it wasn’t the best biscuits and gravy ever made. Whatever–it still counts!)

I’ve made the sausage gravy before and totally loved it. Then, I wondered, what if I put this on top of oatmeal? Once I discovered pureed zucchini in baked oatmeal…it finally happened.

Biscuit Baked Oatmeal with Vegan Sausage Gravy

Prep Time: 5 minutes

Cook Time: 25 minutes

Yield: serves 1-2

What you'll need:

  • 1/4 cup milk of choice, or water
  • 1/2 cup's worth of chopped, peeled zucchini
  • 2/3 cup quick or rolled oats (I use Country Choice Organic)
  • 1/4 heaping tsp baking powder
  • 1/4 tsp baking soda
  • pinch of onion powder
  • pinch of garlic powder
  • 1/8 tsp salt
  • pinch of black pepper
  • Happy Herbivore Sausage Gravy

How to make it:

  1. Preheat the oven to 350 F and spray a single-serving ramekin OR a baking sheet with non-stick spray.
  2. Add all ingredients (except the gravy) to a food processor and pulse until it forms a thick batter.
  3. Transfer to the ramekin and bake for 18-22 minutes, OR drop spoonfuls on your baking sheet to form "drop biscuits" and bake for about 10-15 minutes.
  4. Tip: prepare the gravy while the oatmeal is baking.
