Banana, Mango, & Cardamom Oatmeal

If you haven’t noticed, I’ve been missing a former lover of mine. A couple former lovers, actually.

Peanut butter. And cocoa powder. 🙁

I finished my PB2 and cocoa powder before the move to Brooklyn, and at my new apartment, I decided not to buy more. Why?

Because it’s all I wanted to eat. Every day. My blog was begging for new recipes, but all I ever wanted to eat was Fudgy Banana & Peanut Butter Oatmeal or Berry Blackout Oatmeal or Mocha Brownie Batter Oatmeal with Almond Butter.

And my blog would die if I only ate those three. 🙂 So I’m challenging myself to not keep those two ingredients in the apartment for a couple weeks to see what I can create in the morning without them calling my name.

The idea for this recipe actually came from my banana soft serve. I usually flavor my banana soft serve with cocoa powder and top it with PB2 (shocking, right?). Since I couldn’t do that, I had to get creative. I added frozen mango and a dash of cardamom, and I was stunned by the results. Immediately, I thought: oatmeal.

Banana, Mango, & Cardamom Oatmeal

Prep Time: 2 minutes

Cook Time: 5 minutes

Yield: serves 1

What you'll need:

  • 3/4 cup milk of choice, or water
  • 1/4 cup quick cook steel-cut oats (I use Country Choice Organic)
  • 1 ripe banana
  • 1/2 cup (or more) diced mango (I used frozen)
  • 1/8 tsp cardamom
  • 1/2 tsp vanilla bean paste (or extract)
  • pinch of salt

How to make it:

  1. Bring milk (I use an equal mixture of almond milk and water) to a boil, add oats, and reduce heat to medium. (If you’d like to add flax or chia seeds, do so now. I recommend flax.)
  2. Mash up 2/3 of the banana and add to the oatmeal. Set the remaining third aside for topping.
  3. Add diced mango. Stir mashed banana and mango into the oatmeal.
  4. Once more of the liquid has dissolved, add vanilla extract, a tiny pinch of salt, and cardamom. Stir.
  5. When you’re pleased with the consistency of the oatmeal, transfer to a bowl. Add another splash of your milk of choice, remaining banana (sliced), and any other additional toppings (shredded coconut, nuts, etc.). I added pomegranate arils.
