German Chocolate Cake Batter Oatmeal

Today’s recipe is really a stovetop version of my German Chocolate Cake Baked Oatmeal, which I made half a decade ago. It’s really just a chocolate oatmeal made memorable by the coconut-pecan topping. Since it’s a cake batter, it’s perfect for celebrating birthdays. 🙂

Peppermint Fudge PB2

Shout out to my bulk-sized cocoa powder and PB2! The sad part is that I can finish both in less than a month. I buy the cocoa through the subscription program on Amazon, and it’s delivered to me monthly. I often have to supplement with a small Trader Joe’s container of cocoa powder by the end of the month. I’m such a sucker for mint chocolate flavors. There’s a reason Thin Mints were always my favorite Girl Scout cookie. (Coincidentally, they are also the only vegan version. Hizzah!) Cardamom Fudge Oatmeal

!!!!

After months (literally, months) of having homemade hot chocolate virtually every single day*, I finally figured out how to transfer that love to my morning oatmeal.

*It’s an addiction at this point, TBH.

You see, I have a few versions of my European-style (i.e. THICK AS PUDDING) hot chocolate. One is peppermint. Another is Mexican. Another is almond. And the final version is my personal favorite: cardamom.

Add cardamom to your hot chocolate. You won’t regret it.

I have considered sharing my hot chocolate recipe many a time on here, but it seemed so irrelevant; there are no oats involved, after all. Alternatively, I tried finding a similar recipe on the internet for me to include in my “Random Recommendations” section, but that has been unsuccessful as well. Instead, I have this oatmeal recipe for you. One day for dinner, I wasn’t in the mood to make anything interesting for dinner. I try to avoid doing this, but I decided to be lazy and make oatmeal. Confession: when I buy a bag of chocolate chips, they’re usually gone within a week or two. That’s why I will go such long stretches without chocolate chip recipes. If I had a bag in my kitchen all the time, I would go through about six a month. I just can’t keep my hands out of them!

This recipe is admittedly fussy when it comes to pairing it with the right oatmeal base (not every recipe enjoys being paired with salt!). I had this on Sweet Potato Fudge Oatmeal, but I could see it working in a few others, too. One that immediately comes to mind is Chocolate Chip Cookie Baked Oatmeal. I love salted chocolate chip cookies. It would be nice as the frosting on top of Brownie Baked Oatmeal as well! (more…)


Fudgy Chestnut Oatmeal

Chestnut puree strikes again! You didn’t think I would make you make (or buy) an entire jar of chestnut puree and then not give you any more recipes to use it up, did you?

Meet the newest member of the fudge family: this Fudgy Chestnut Oatmeal is most similar to Sweet Potato Fudge Oatmeal; it has a similar earthiness and thick creaminess. It also requires a generous dose of maple syrup.* Whatever you do, don’t skip the sweetness–and this is coming from someone who doesn’t have a sweet tooth.

*You could also try using chopped dates to sweeten it instead. I haven’t tried this myself because I find dates to be a tad too expensive for my grad school budget. Le sigh.
